Fiesta Chicken Casserole is a family friendly meal that is sure to become a favorite! This cheesy chicken casserole is easy to make, using canned beans, corn and tomatoes. Can be made in under an hour!
This is a great “pantry” meal. Use up all of those cans in the pantry and either rotisserie chicken or left-over chicken you might have in the fridge. This dinner can be made in under an hour and it’s also a great freezer meal.
Easy Chicken Casserole With Rotel
Our family loves this cheesy fiesta chicken casserole, especially on busy weeknights. We can usually eat it for 2 dinners during the week. It is also one of my favorite dishes to make for potlucks or to bring to new moms.

Ingredients
Rotini Pasta – My family loves Rotini but macaroni or ziti would be great too.
Shredded Chicken – I like using Rotisserie chicken or this Air Fryer Rotisserie Chicken
Black Beans – I just use canned beans for this recipe.
Corn – You can use canned or fresh corn kernels.
Diced Tomatoes with Green Chilies – I used mild Rotel for this, you could also use salsa or petite diced tomatoes.
Sour Cream
Cheese – Use your favorite cheese. I like Colby/Monterrey Jack
Garlic Powder and Cumin

The great thing about this casserole is that you basically dump all the ingredients together and then bake.
- Start by mixing together sour cream, tomatoes, corn, beans, chicken.
- Add in cooked pasta and stir until everything is mixed.
- Stir in half of the shredded cheese and then pour into 9×13 casserole dish.
- Bake for approximately 20 minutes.
- ***Optional, top with green onion and avocado.
Tips for a delicious casserole
- Make this over the top by adding an extra dollop of sour cream, diced jalapenos and black olives.
- Dice or shred the chicken into small pieces so it’s easier to eat.
- If you don’t like beans (like my mom) feel free to omit them or substitute with pinto or white beans.
- If you don’t have Rotel, you can use a cup of your favorite salsa.
Can you freeze
Yes! Prepare the casserole but do not bake. Cover the dish with plastic wrap and then tightly with foil. If I know I’m going to freeze, I like making them in disposable pans.
To bake, let the casserole thaw in the refrigerator overnight. Remove plastic wrap and foil. Bake at 350 degrees for 20-30 minutes.

Fiesta Chicken Casserole
Ingredients
- 2 cups Rotini Pasta
- 1 cup sour cream
- 1 15 oz can tomatoes with green chilis
- 1 15 oz can corn, drained
- 1 15 oz can black beans, rinsed and drained
- 2 cups shredded chicken
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 2 cups shredded cheese
Instructions
- Preheat oven to 350 degrees F.
- Cook and drain pasta according to directions on the box.
- In a large bowl, mix together sour cream, diced tomatoes, beans, corn, chicken and 1 cup cheese. Stir in cooked pasta.
- Spray 9×13 baking dish with non-stick cooking spray. Pour pasta mixture into baking dish.
- Top with remaining shredded cheese.
- Bake for 20 minutes or until cheese melted on top.

I made this but I used rice instead of pasta. Also I added taco seasoning instead of the cumin. I also put some salsa on top when serving with some fresh lime juice. Everyone loves it.
