Baked oatmeal is a great breakfast idea when you are wanting something hearty and filling. It doesn’t hurt that it tastes like you are eating dessert for breakfast, yum!

This chocolate baked oatmeal is not only delicious, it’s also packed with fiber and protein to help keep you full throughout the morning. That’s a win-win!

Pro tip: Package each serving in individual containers for meal prep through the week.

Simple ingredients are used for this recipe. You might even have them in your pantry. They can also be adjusted to taste.

  • Rolled oats – You will want to use old-fashioned rolled oats for this recipe. Steel cut oats and quick oats do not give the best texture.
  • Cocoa powder – Unsweetened cocoa powder gives these baked oats a delicious, rich chocolate flavor.
  • Baking powder, salt – Baking powder helps the baked oatmeal rise and gives it a nice texture. A little bit of salt helps to balance the sweetness.
  • Brown sugar – Brown sugar is used for sweetness. You can substitute with pure maple syrup.
  • Eggs – Eggs are used as a binder. Be sure to lightly beat them before mixing with the other ingredients.
  • Butter – Melted butter is used to add flavor. You can substitute with vegetable oil if you prefer.
  • Vanilla – Vanilla extract adds a warm, sweet flavor to the dish.
  • Milk – The milk helps to soften the oatmeal. Feel free to use your favorite milk. Whole milk will add a richer flavor but you can substitute with 2% your choice of milk.
  • Chocolate chips – I am using semi-sweet chocolate chips.
