Taco twist casserole is the recipe you need when you don’t know what to make for dinner. Seasoned ground beef is combined with twist-shaped rotini pasta and cheese. A great, simple recipe perfect for an easy meal.



 

This easy taco casserole recipe is a family favorite. Beefy, cheesy, and so flavorful.

What you will need

  • Ground beef – You can use your ground beef of choice. I am using a leaner beef but feel free to use a higher fat content.
  • Bell pepper – You can use a green, red, or yellow bell pepper.
  • Rotini pasta – The name of this casserole comes from the twist shape of rotini.
  • Taco seasoning – Use a package of taco seasoning or homemade taco seasoning.
  • Tomato sauce – This is the base for the sauce in the casserole.
  • Sour cream – Sour cream gives the dish a hint of creaminess.
  • Cheese – Shredded cheese is blended into the pasta mixture and also to top the casserole.
  • Green onion – Adds a little flavor and color.

How to make taco twist casserole

Step one: Pasta -Preheat the oven to 350 degrees. Spray a casserole dish with non-stick cooking spray. Bring a pot of water to a boil. Cook the rotini pasta according to directions.

Step two: Beef – Place ground beef in a large skillet over medium heat. Break up the beef and cook until browned. Drain any excess grease. Stir in green pepper and cook for another 1-2 minutes.

Step three: Mix – Stir in the tomato sauce and taco seasonings. Mix to combine.

Step four: Drain the water off the cooked pasta. Return the pasta to the pot. Pour in the ground beef mixture, sour cream, cheese, and green onions. Stir to combine.

Step five: Bake – Pour the mixture into a 9×13 casserole dish. Bake for 20 minutes. Top with shredded cheese and bake another 5 minutes or until melted.

Substitutions and variations

Beef – You can substitute the ground beef with ground turkey, ground bison, or ground chicken.

Pasta – Rotini gives you the twist name. Feel free to substitute with other pasta like penne, rigatoni, farfelle, and mostaccioli.

Cheese – I like using a Monterey jack mix or cheddar cheese. You can use your favorite cheese that melts.

Chips – Try topping the casserole with crushed tortilla chips or nacho chips.

How to store

Store: Keep any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the oven or in the microwave.

Freeze: This casserole can be frozen in a freezer safe container for up to 3 months. Thaw in the refrigerator overnight and then bake at 350 for about 20 minutes of until heated through.
