Ingredients 

  • 1 head romaine lettuce chopped
  • 1 tomato, diced
  • 1 English cucumber, diced
  • 1/2 red onion, sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Instructions 

  • Combine the chopped lettuce, tomato, cucumber, onion, in a large bowl.
  • Place vinegar, oil, mustard, salt, and pepper in a jar. Top with a lid and shake to make the dressing.
