Ingredients

  • Chicken – You will need cooked shredded or diced chicken. This is a great recipe for rotisserie chicken.
  • Hash browns – Frozen shredded hash browns.
  • Cheese – Shredded cheddar cheese. I recommend shredding your own cheese for the best flavor but you can use prepackaged shredded cheese.
  • Cream of chicken soupCream of chicken soup or substitute with cream of mushroom soup.
  • Sour cream – Adds great flavor and creaminess.
  • Bacon – Crumbled bacon adds extra delicious flavor. You can substitute with bacon bits if you are in a hurry.
  • Milk – Just a little milk is needed to make the chicken mixture.
  • Crackers – Ritz crackers work well but you can use your favorite butter crackers.
  • Butter – Melted butter helps to make the cracker topping.
  • Salt and pepper

How to make hash brown chicken casserole

  • Filling – Combine sour cream, cream of chicken soup, milk, salt, and pepper in a large bowl. Stir in the thawed hash browns, chicken, and cheese.

  • Spread the mixture in a 9 x 13 casserole dish sprayed with non-stick cooking spray.

  • Cracker crust – In a bowl, stir the crushed crackers and melted butter. Spread the crackers over the top of the chicken mixture. Bake for 45 minutes.

Variations

This is a great base recipe that is wonderful on it’s own but you can easily add in some extras for even more flavor.

Seasonings – Try adding a pack of ranch seasonings into the chicken mixture for a chicken, bacon, ranch casserole. You could also try mixing in 1 teaspoon of Italian seasonings.

Vegetables – Add some color and flavor by adding in 1 cup of thawed, frozen mixed vegetables. I also like adding in steamed broccoli for a chicken and broccoli casserole.

Cheese – Try changing up the cheddar cheese with mozzarella, Monterey Jack, or even pepper jack cheese.

Topping – Substitute the crushed Ritz crackers with crushed corn flakes or potato chips.

Can this casserole be made ahead of time?

Yes, you can prepare the casserole the night before. Prepare the casserole, cover tightly and store in the refrigerator until ready to bake.

Store any leftovers in the refrigerator for up to 3 days. Make sure to cover the dish or transfer to an airtight container.

Ingredients 

  • 2 cups cooked chicken, shredded
  • 1 30 ounce shredded hash browns thawed
  • 1 cup sour cream
  • 1 10.5 ounce can cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded mild cheddar cheese
  • 8 pieces cooked bacon, crumbled
  • 2 cups crushed Ritz crackers
  • 3 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions 

  • Preheat the oven to 350 degrees F. Spray a 9 x 13 casserole dish with non-stick cooking spray.
  • In a large bowl, stir together the sour cream, cream of chicken soup, milk, salt, and pepper.
  • Stir in the thawed hash browns, shredded chicken, shredded cheese, and crumbled bacon.
  • Spread the mixture in the prepared baking dish.
  • In a bowl, combined melted butter and crushed crackers. Spread the mixture evenly over the chicken mixture. Bake for 45 minutes or until the crackers turn golden brown.
