I love using cake mixes to make different recipes like cake mix brownies, cake mix cookie bars, and cake mix waffles but today I am using a brownie mix to make cookies.

Brownie Cookies from box Ingredients

  • Box brownie mix – I use Ghirardelli double chocolate mix and have also used Pillsbury brownie mix. I would recommend not using Betty Crocker for this recipe since it doesn’t contain baking soda and could cause the cookies to flatten.
  • Vegetable or canola oil – Either of these work well. You can also use coconut oil.
  • Eggs – Two eggs are needed for this recipe.
  • All-purpose flour – Just a little flour is needed for these cookies.

Brownie Cookies from Mix Variations

These chocolate crackle brownie cookies are perfect to mix in other ingredients. I recommend adding in 1/2-3/4 cup of the ingredient you choose. Here are a few suggestions:

  • Chocolate chips or chunks
  • Peanut butter chips
  • Toffee bits
  • 1/4 teaspoon cinnamon
  • Sprinkles
  • Chopped nuts
  • Sprinkle the top with sea salt

  1. Mix: Mix together brownie mix, eggs, oil, and flour with an electric mixer until combined.
  2. Scoop: Scoop cookie dough and place on a lined baking sheet about 1 inch apart.
  3. Bake: Bake at 350 degrees F for 8-9 minutes.
  4. Cool: Let the cookies cool for 5 minutes on a wire rack.

These cookies also make the perfect “sandwich” cookie. Try making a cookiewich using vanilla ice cream and two cookies or even fill with marshmallow fluff.

Brownie Mix Cookies Recipe Tips

  • There are several brands of brownie mix on the grocery shelves and each is a little different in size. I have made this with Ghriardelli and Pillsbury.
  • Betty Crocker mix doesn’t contain baking soda so it might make the cookies flat. If you decide to use this brand, try adding 1/2 teaspoon of baking soda to help keep them from flattening.
  • Line the baking sheet with parchment paper or a silicone mat.
  • For uniform sized cookies, try using a cookie scoop.
  • Don’t over bake these cookies. Once they cool they will be perfect on the inside. 8-9 minutes seems to be the perfect cook time.

How to store Brownie Mix Cookies

Store: Place the chocolate cookies in an airtight container and leave out at room temperature. They will last about 5 days.

Freeze: They can be frozen. Let them completely cool and then place in freezer safe bag, making sure to remove any excess air. Freeze up to 3 months. Let thaw in the refrigerator.

The big difference between the two mixes is that a cake mix contains more leavener. This helps the cake to rise. A brownie mix does not contain much leavener and they typically contain more sugar in the mix.

Yes, these cookies can be frozen. Let the cookies completely cool and then place in a freezer safe bag or container. Freeze for up to 3 months.

Ingredients 

  • 1 box brownie mix
  • 2 eggs
  • 1/4 cup vegetable oil or canola
  • 1/8 cup all-purpose flour

Instructions 

  • Mix together brownie mix, eggs, oil, and flour with an electric mixer until combined.
  • Scoop cookie dough and place on a lined baking sheet about an inch apart. 
  • Bake at 350 degrees F for 8-9 minutes. 
  • Remove from oven and let cookies sit 4-5 minutes before letting cool on a wire rack.

    Heather my cookies looked just like the picture and tasted AMAZING. I used a double scoop which made 10 giant cookie. I had to bake a few xtra minutes since the cookies were larger. Thanks for the recipe!

  3. This recipe was delicious!! 😋 instead of using oil I used the same amount of butter in its place. I mixed the brownie mix, flour and a half teaspoon of baking powder in a bowl and mixed all the powder substances. In a separate bowl I Mixed the eggs, then added butter, and half teaspoon of vanilla extract mixed it all together then poured everything in a bowl. I also froze some nutella in drops and when I spooned in the dough I put a frozen nutella drop in the middle and Cooked 10 minutes on 350 and they are delicious!!

    Perfect and delicious! Looks just like the picture. I believe some people that have issues may not be cooking on a stone with parchment paper. I also have a gas oven which makes them turn out perfect.

  7. My husband is diabetic so used a sugar free mix which weighs 2 ozs less than regular brownie mix. Used other ingredients as listed. Baked 20 mins, cooled on sheet for 5 but they were not done. Not for us I guess

    1. Hey Mary . Sorry to hear that too! This was my first time but I paid attention on the mix texture used. I used less egg and little more flour. I was wanted something crumbly textured. Even left the mix on the fridge for 2hrs. To get some consistency they rise like a charm but came out flat once cooled. The taste amazing and the look just like our host’s . Hope this helps! As long as they are edible we can always try again . Good luck friend!

    Just the recipe I was looking for. My cookies turned out perfect!
    Thank you so much for sharing. I will say that my first batch, only 4 did turn flat, however, the remaining cookies were kept in for an additional 1 minute and they are picture perfect. I added a pinch of sea salt to a few and so yummy! I also cut one cookie in half and made an ice cream sandwich!!! OMG so yummy!
