This is your preference. I personally like the cucumber skin on English cucumbers but feel free to peel off the skin.
If using English cucumbers, I find they don’t have many seeds so I leave them in. You can remove seeds if you prefer.
Yes, I recommend cutting the vegetables and storing them in one container and store the dressing in a separate container. Pour the dressing over the salad when ready to serve.

Greek Cucumber Salad
Ingredients
- 2 English cucumbers
- 1 cup grape tomatoes, halved
- 1/2 red onion, sliced thin
- 1/2 cup crumbled Feta cheese
- 1 cup olives optional
- 1/4 cup extra virgin olive oil
- 1 teaspoon dried oregano
- 1 tablespoon lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Instructions
- Cut cucumbers into small chunks. Place in bowl.
- Add halved tomatoes, onion, olives and Feta cheese. Toss to combine.
- In a small bowl, mix together extra virgin olive oil, oregano, lemon juice, salt and pepper. Pour over salad and toss to coat.
- Serve or refrigerate until ready to eat.
