When I am looking for a simple but tasty meal, I love to make a big pot of soup. I mean, what could be better? There are so many varieties and they’re always so easy to make! These easy soup recipes are just some of my favorites (and there are a lot of them)!

Potato soup, vegetable soup, wonton soup, and pumpkin soup.


 

Soups are great for those busy weeknights when you’re looking for something quick or just any time when you want to cozy up with a hearty bowl of soup. Most of these recipes are 30 minutes or less and can be made with minimal ingredients.

You will find some favorites like tomato soup, chicken noodle soup, and more. There are also some other amazing recipes like lentil soup, pumpkin soup, and wonton soup. There’s something for everyone!

Easy Soup Recipes

A collection of simple soup recipes that can be made quickly with few ingredients including this tortellini soup.

Servings: 6

Ingredients 

  • 2 carrots peeled and sliced
  • 2 stalks celery chopped small
  • 1 small onion diced small
  • 8 cups chicken broth
  • 2 cups water
  • 1 package 20 ounce refrigerated tortellini
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Instructions 

  • Melt the butter in a large stock pot or Dutch oven. Place the carrots, celery, and onion in the pot and cook about 2-3 minutes or until softened.
  • Pour broth into the pot and bring to a boil. Reduce the heat to a simmer and pour in tortellini. Cover with a lid and cook the tortellini according to package directions.
  • Add in salt and pepper. Stir and serve warm.
