My easy Bisquick breakfast casserole recipe is filled with eggs, sausage, and cheese. Perfect to feed a crowd for breakfast or brunch, you can even serve for a busy weeknight meal.

Bisquick is one of those panty ingredients that makes life so much easier. This easy Bisquick breakfast casserole is one of my favorite and go-to recipes when I want something simple, delicious, and something I know my whole family will love.

I usually make versions of this breakfast casserole for almost every holiday because it’s a great way to feed a hungry crowd and can be served any time of the day.

While my family agrees that this breakfast sausage version is their hands down favorite, it’s easy to customize with ingredients you have on hand like bacon, ham, or other veggies.

Ingredients

Just a few ingredients are needed for this easy Bisquick breakfast casserole.

  • Bisquick – You can typically find a box of Originial Bisquick mix in the baking aisle of the grocery store.
  • Sausage – Breakfast sausage is used for this recipe. We are using a pound of original Jimmy Dean sausage but sage, spicy sausage, or even the maple flavored would also be delicious.
  • Eggs – 4 large eggs.
  • Milk – You can use 2% or whole milk for this recipe. Whole milk will give it a richer flavor.
  • Bell Peppers – This ingredient is optional but it adds nice color and flavor. We are using red bell pepper but feel free to use your favorite color.
  • Onion – White or sweet Vadalia onion.
  • Hash Browns – Frozen shredded hash browns are needed. They don’t need to be thawed.
  • Shredded Cheese – I am using a mild cheddar cheese. Sharp cheddar, cheddar blend, or even Colby Jack will work great.
  • Seasonings – Salt and ground black pepper

    How to make Bisquick breakfast casserole

    Step one: Preheat oven to 375 degrees F. Start by cooking the breakfast sausage in a large skillet. You will want to crumble it up and cook until browned. Discard the excess grease and then add pepper and onion. Cook another 2-3 minutes to soften.

    Step two: Spray a 9 x 13 casserole dish with nonstick cooking spray. Add cooked sausage mixture, hash browns, and half of the cheese into the prepared baking dish. Stir the ingredients.

    Step three: In a large bowl, whisk together eggs, milk, Bisquick, salt and pepper. Pour the egg mixture over the sausage mixture. Bake for 40-45 minutes or until the top starts to turn golden brown.

    Step four: Top the casserole with remaining cheese. Bake for another 2-3 minutes or until cheese melts. Make sure to let it sit for about 5 minutes before slicing into pieces.

    Heather’s recipe tips

    • If the casserole starts to get brown and it’s not finished baking, lightly cover the dish with aluminum foil.
    • If you are planning on freezing this dish, use an aluminum pan. These are perfect for freezing and reheating.
    • Let the casserole rest at least 5 minutes before serving.

    Recipe variations

    This breakfast casserole recipe is easy to customize. Here are a few suggestions:

    Protein: Add or replace the sausage with cooked, chopped bacon. Diced ham is also delicious in the casserole.

    Vegetables: Love veggies? Try adding in sliced mushrooms,

    Heat: Like a little spice? Try adding a few dashes of hot sauce to the egg mixture. You can also stir in a can of diced green chilis.

    Sweet: Have a sweet tooth? Mix in 2-3 tablespoon of maple syrup to the egg mixture. This will give you a sweet and savory casserole.

    Storage

    Store: Any leftovers can be stored in the baking dish covered with foil. Make sure to let the dish completely cool before storing in the refrigerator. It can also be stored in an airtight container. It will last 3-4 days.

    Reheat: Reheat an individual piece on a microwave safe place for 45 seconds. You can also reheat the whole baking dish in the oven at 350 degrees.

    Freeze: You can easily freeze this egg casserole. Make sure to let it completely cool. Slice into individual pieces and place in freezer safe bags or containers. It will last up to 3 months.
