Freezing is a great way to preserve food to use at a later date. Things like pork, ham, and even guacamole freeze and thaw wonderful. There are a few things that don’t freeze so well like cream cheese and sour cream.

Can you freeze sour cream?

The short answer is Yes, you can freeze sour cream but once thawed it does not retain the creamy texture that it starts with originally. The consistency does change once it has been frozen and thawed.

So while it might not be great used as a condiment, it still would be fine to use for things like baking.

How to freeze sour cream

Here are a few things to keep in mind before freezing.

  • If you have a new, unopened container of sour cream, it can be frozen in the original container.
  • If you are freezing a large amount you might want to freeze the sour cream in smaller portions. Freezing in an ice cube tray is a great way to freeze small portions.

To freeze already opened sour cream:

  1. Stir the sour cream so that the consistency is even throughout.
  2. Spoon the sour cream in a freezer safe container or freezer bag. If using a bag, try to remove as much air as possible.
  3. Place in the freezer for up to 3 months. Don’t forget to label with a date.

How to thaw frozen sour cream

To thaw, place the frozen sour cream in the refrigerator overnight or for a few hours. When ready to use, make sure to stir. You will notice that it might be a little runny but that is normal.

***Don’t thaw at room temperature because it could cause bacterial growth.

Does sour cream curdle when frozen?

The texture does change, it separates, and has the appearance of curdled once frozen and thawed. Even though it might look strange, it’s still ok to use and eat.

Can you use thawed sour cream for dips or toppings?

I would recommend not using thawed sour cream for dips or baked potato toppings because it will be more runny and not the right consistency for these types of recipes.

It will work well for different baked goods like pancakes, cakes, and muffins.

How to tell if sour cream has gone bad

Make sure to check the expiration date before freezing.

  • If ice crystals have formed, it might not be good to use.
  • Bad sour cream will have a sour, bad smell. If this is the case, discard.
  • The appearance of mold is another sign of spoilage.
