My sausage hash brown bites pack all your favorite breakfast flavors into one delicious bite. Sausage, hash browns, and cheese come together to make a bite that is hard to resist. These are perfect to serve for a brunch, at a tailgate, or even a hearty appetizer.

One of our favorite things to make, especially during the fall, is sausage balls. These hash brown bites are similar to our favorite sausage balls recipe but with the addition of shredded hash browns and some cream cheese to make them extra hearty and delicious.

Last year we went to tailgate and I knew I wanted to bring something filling that people could easily pick up and enjoy. These hash brown sausage bites ended up being the perfect choice. Everyone loved them and they were gone in no time.

Since then, I have been making these for a quick breakfast before school, for holiday mornings, and just to have around the house for snacking. They can be served warm or at room temperature and they make around 35 bites so they can feed a crowd or be frozen for later.

  1. Mix in Bisquick, garlic powder, and sausage.
  2. Stir in hash browns and shredded cheese until fully combined.

  1. Roll the mixture into 1 inch balls and place on the baking sheet.

  • Remove extra moisture from the thawed hash browns. I like to squeeze the thawed hash browns to remove any extra moisture.
  • Don’t over mix so that the bites don’t become too tough.
  • Spray your hands with non stick cooking spray to help form the balls.
  • Try to shape in similar size so that they cook evenly. I like using a cookie scoop or tablespoon for this.
