- 2 1/2 cups oatmeal
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup light brown sugar
- 2 eggs
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/4 cup milk
- 1/2 cup semi-sweet chocolate chips
Preheat oven to 375 degrees F. Spray an 8 x 8 casserole dish with nonstick cooking spray.
In a large bowl, stir oats, cocoa powder, baking powder, and salt.
Stir in melted butter. Mix in vanilla extract, milk, and eggs.
Pour the mixture into prepared baking dish and spread into an even layer. Spread chocolate chips on top of the oatmeal mixture.
Bake for 25-30 minutes. Let cool for 5-10 minutes before cutting and serving.
- Use old-fashioned oats. Rolled, old-fashioned oats will give you the best texture.
- Let the oatmeal cool a little bit before cutting. You want the oatmeal to congeal and come together so it doesn't fall apart.
