My Cajun sausage pasta recipe is one pot meal that is loaded with flavor. Andouille sausage is cooked with peppers, onions, and a cajun cream sauce. A comfort food dinner that’s great for a busy weeknight.

Being a mom of three teenagers, I’m always in need of a fast, easy dinner that is going to satisfy picky eaters. This cajun sausage pasta is one of those rare meals that all three kids can agree on.
Not only does it deliver on big flavor, it’s all made in one pot or skillet which is a big bonus for me. Less mess, time, and stress which is a big win in my book.
One of my favorite tips, don’t skip the parmesan cheese at the end. The cheese melts into the cajun sauce, adding a delicious final touch.

Here are the ingredients you will need to make this one pan creamy Cajun sausage pasta.

- Sausage: I use andouille sausage for that classic Cajun flavor but you can substitute with kielbasa. I am using Aidells Cajun Style Andouille smoked sausage.
- Pasta: You can use a variety of pasta shapes like penne, rotini,
- Bell peppers: Bell peppers add color, texture, and flavor.
- Onions: Use yellow onion, sweet onion, or even red onion give this dish a nice depth of flavor.
- Garlic: Packs in the flavor.
- Diced tomatoes: A can of petite diced tomatoes. You will use the whole can, do not drain.
- Cajun seasoning: Cajun seasoning really makes this dish.
- Chicken broth: Helps to make the sauce.
- Heavy cream: Heavy cream is the base of the creamy sauce.
- Parmesan cheese: Freshly grated parmesan melts into the pasta for added flavor.
Note, I consider this recipe on the medium to high spicy level. Feel free to adjust the cajun seasoning to taste.
How to make cajun sausage pasta

Step one: Slice the sausage and cook in a large skillet or pot over medium heat. Cook until it starts to brown. Remove the sausage and set aside.

Step two: Add the diced peppers and onions to the same skillet. Stir until they start to soften, about 2-3 minutes. Stir in the garlic.

Step three: Stir in the chicken broth, heavy cream, cajun seasonings, salt, and pepper.

Step four: Stir in the pasta. Try to cover the pasta in the liquid. Place a cover over the skillet and boil for 15 minutes.

Step five: Add the cooked sausage back in the skillet and stir. Top with grated parmesan cheese. Serve warm.

- Try pushing the pasta down in the liquid as much as possible. This will help it cook properly.
- Stir the pasta halfway through cooking. This helps the pasta cook evenly.
- Cook the pasta to al dente. Cooking the pasta al dente will help it hold up to the sauce and sausage without becoming mushy.
- Adjust the Cajun seasoning to your preference. The recipe has a medium-high spicy hot level. You can adjust the amount of Cajun spice to your liking.
- Try using freshly grated Parmesan cheese. Fresh cheese melts easier over the pasta.

Yes, you can add less cajun spice. If you want it more mild, I recommend adding about 1/2 tablespoon of cajun seasoning.
You can substitute with half and half or whole milk.

Cajun Sausage Pasta
Ingredients
- 1 (12 ounce) andouille style sausage (use andouille sausage or kielbasa sausage)
- 1 cup onions, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (12 ounce) pasta
- 2 cups chicken broth
- 1 (14.5 ounce) can petite diced tomatoes (do not drain)
- ¾ cup heavy cream
- 1 ½ tablespoons Cajun seasoning
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup parmesan cheese
Instructions
- Slice the sausage into 1/2-inch rounds. Put the sausage in a large skillet or pot.
- Cook the sausage over medium heat until it starts to brown. Transfer the cooked sausage on a paper towel lined plate and set aside. Leave the grease in the skillet, don't wipe it out.
- Add the diced peppers and onions to the skillet. Cook for 2-3 minutes over medium heat. Stir in the garlic and cook another minute.
- Pour the chicken broth, can of diced tomatoes, heavy cream, cajun seasoning, salt, and pepper. Stir.
- Add the pasta to the skillet. Stir to over the pasta and press the pasta down into the liquid. Turn the heat up to medium-high. Let the liquid come to a boil and then cover the skillet with a lid.
- Stir the pasta halfway through cooking and cover again. Cook for 15 minutes. Uncover and stir the pasta. Add the sausage back into the skillet. Top with freshly grated parmesan cheese.
- Serve warm.
