- 1 (12 ounce) andouille style sausage (use andouille sausage or kielbasa sausage)
- 1 cup onions, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (12 ounce) pasta
- 2 cups chicken broth
- 1 (14.5 ounce) can petite diced tomatoes (do not drain)
- ¾ cup heavy cream
- 1 ½ tablespoons Cajun seasoning
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup parmesan cheese
Slice the sausage into 1/2-inch rounds. Put the sausage in a large skillet or pot.
Cook the sausage over medium heat until it starts to brown. Transfer the cooked sausage on a paper towel lined plate and set aside. Leave the grease in the skillet, don't wipe it out.
Add the diced peppers and onions to the skillet. Cook for 2-3 minutes over medium heat. Stir in the garlic and cook another minute.
Pour the chicken broth, can of diced tomatoes, heavy cream, cajun seasoning, salt, and pepper. Stir.
Add the pasta to the skillet. Stir to over the pasta and press the pasta down into the liquid. Turn the heat up to medium-high. Let the liquid come to a boil and then cover the skillet with a lid.
Stir the pasta halfway through cooking and cover again. Cook for 15 minutes. Uncover and stir the pasta. Add the sausage back into the skillet. Top with freshly grated parmesan cheese.
Serve warm.
- Try pushing the pasta down in the liquid as much as possible. This will help it cook properly.
- Cook the pasta to al dente. Cooking the pasta al dente will help it hold up to the sauce and sausage without becoming mushy.
- Adjust the Cajun seasoning to your preference. The recipe has a medium-high spicy hot level. You can adjust the amount of Cajun spice to your liking.
- Try using freshly grated Parmesan cheese. Fresh cheese melts easier over the pasta.
