Ingredients Needed: 

You only need a few ingredients for this dish. You can also use all brussels sprouts or all butternut squash if you prefer. 

  • Brussels Sprouts – They can be purchased already cleaned and ready to use or not. They are very easy to clean and cut. 
  • Butternut Squash – You don’t need a large squash for this dish. Acorn squash also works. 
  • Olive Oil – This helps the brussels sprouts and squash get nice and crispy. 
  • Parmesan Cheese – This cheese adds a nice salty flavor. 
  • Bread Crumbs – The bread crumbs gives the dish a little substance. I have used both regular crumbs or Panko crumbs. 
  • Garlic Powder – This can be omitted but I love the flavor of garlic in this side dish. 
  • Salt and Pepper – I use coarse or kosher salt. 

How To Make Air Fryer Roasted Parmesan Brussels Sprouts and Squash

  • Start by preparing the brussels sprouts and squash. Cut the ends off of the sprouts and then cut them in half.

  • Dice the butternut squash into small cubes. 
  • Place the sprouts and squash in a large bowl and then stir in olive oil, salt, pepper and garlic powder. 
  • Pour into the air fryer basket and cook at 390 degrees for 10 minutes.  
  • In a small bowl, stir together bread crumbs and Parmesan cheese. Sprinkle the mixture on top of the sprouts and squash and cook again at 390 for 5 minutes.

Tips For The Perfect Air Fryer Roasted Brussels Sprouts and Squash

  • Cut the vegetables in uniform size.
  • Try to spread out in one layer in the air fryer basket. 
  • If your vegetables are on the larger side, they might require a few extra minutes for roasting.
  • If you want to kick it up a notch, add some crumbled bacon.

How Do You Trim Brussels Sprouts?

Start by cutting of the stem end. I like to cut them in half for this recipe. 

Do Brussels Sprouts Need To Be Washed?

Yes, even though they are typically pretty clean, place them in a colander and rinse with cold water. Pat dry before adding olive oil.

How To Cut A Butternut Squash For Roasting

Use a vegetable peeler or sharp knife to remove the skin from the squash. Cut in half and remove seeds. Cut into small cubes. 

Can This Be Made In The Oven?

Yes! Toss the brussels sprouts and squash in the oil and spices. Place on a baking pan and sprinkle with the mixture of Parmesan and bread crumbs. Bake at 400 degrees for approximately 20 minutes.

Ingredients 

  • 1 lb brussels sprouts
  • 2 cups cubed butternut squash
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon course salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup bread crumbs
  • 1/2 cup Parmesan cheese

Instructions 

  • Cut stems of brussles sprouts and then cut in half. Cut butternut squash into small cubes.
  • Add sprouts and squash into a bowl. Mix in olive oil, salt, pepper and garlic powder.
  • Pour sprouts and squash into air fryer basket. Cook at 390 degrees for 10 minutes.
  • In a small bowl, stir together bread crumbs and Parmesan cheese.
  • Sprinkle bread crumb mixture over sprouts and squash and cook again at 390 for 5 minutes.
  • Serve warm.
