Ingredients

  • 1 16 ounce rotini pasta
  • 1 pound ground beef
  • 1/2 cup diced green bell pepper
  • 1 15 ounce tomato sauce
  • 1 ounce taco seasonings
  • 1/2 cup sour cream
  • 2 cups shredded cheese
  • 1/4 cup diced green onion

Instructions

  • Preheat the oven to 350 degrees. Spray a casserole dish with non-stick cooking spray.
  • Bring a pot of water to a boil. Cook the rotini pasta according to directions.
  • Place ground beef in a large skillet over medium heat. Break up the beef and cook until browned. Drain any excess grease. Stir in green pepper and cook for another 1-2 minutes.
  • Stir in the tomato sauce and taco seasonings.
  • Drain the water off the cooked pasta. Return the pasta to the pot. Pour in the ground beef mixture, sour cream, cheese, and green onions.
  • Pour the mixture into a 9x13 casserole dish. Bake for 20 minutes. Top with shredded cheese and bake another 5 minutes or until melted.
