No bake s’mores cracker cookies are a sweet and salty treat that can be made in minutes. Everything that is great about the classic campfire treat, no fire required. Buttery Ritz crackers surround fluffy marshmallow creme and then dipped in chocolate. This is perfect treat for snacking, holiday parties, bake sales, and more.

This past winter we ended up selling our camper. While I don’t miss packing for a camping trip, I do miss sitting around the fire making s’mores when the sun went down. I mean, who can resist gooey marshmallow with chocolate and graham crackers.

These s’mores cracker cookies have been a wonderful way to enjoy those same delicious s’mores flavors at home. All the things you love about the classic, but with the addition of buttery Ritz crackers that add a wonderful sweet and salty twist.

One of my favorite things about this dessert is that it’s fast and easy to make. No campfire to build, no oven to turn on, just a few simple ingredients and 20 minutes. They are great for a make ahead holiday cookie tray, bake sale, or just a tasty snack.

Ingredients

Ritz s’mores cookies only require just a few simple ingredients you might already have in your pantry.

  • Ritz crackers: Buttery Ritz crackers make a great base for the cookie.
  • Marshmallow creme: The perfect soft, fluffy marshmallow filling for the s’mores cookies.
  • Chocolate melts: I like using Ghriradelli chocolate melting wafers for the best chocolate flavor.
  • Optional: Crushed graham crackers add the classic s’mores flavor. I like to sprinkle them on top of the chocolate coating before it sets. You can also add other toppings like marshmallow bits, toffee bits, mini chocolate chips, or sprinkles.

Can I use regular marshmallows?

Yes, you can substitute with regular marshmallows for s’mores cracker cookies but I recommend using marshmallow creme because it spreads easy and stays soft.

If you would like to use a regular marshmallow, I recommend cutting them in half and placing on the Ritz cracker. Place in a 350 degree oven for 1 minutes and then press another Ritz on top of the marshmallow. Let cool before dipping in the melted chocolate.

How to make S’mores cracker cookies

This easy s’mores dessert can be put together in minutes. Scroll to the bottom for the full recipe instructions.

Step one: Line a cookie sheet with wax paper. Place 24 Ritz crackers on the wax paper.

Step two: Place a little marshmallow creme on each Ritz cracker. Place the remaining Ritz crackers on top of the marshmallow creme to make a sandwich. Press the crackers together so that they hold together.

Step three: Melt the chocolate wafers in a microwave safe bowl in 30 second intervals until the chocolate is completely melted.

Step four: Place a cracker sandwich on a fork and then carefully dip in the melted chocolate until covered. Let any excess chocolate drip off and then place back on the wax paper.

Step five: Immediately top with crushed graham crackers and any other topping you are using like marshmallow pieces, mini chocolate chips, or sprinkles.

Step six: Let the chocolate set and then serve.

There are several ways to make these s’mores cracker cookies your own. Here are a few suggestions:

  • Peanut butter s’mores Ritz cracker cookies: Spread a little peanut butter on one cracker and marshmallow creme on another cracker and sandwich together.
  • Peanut butter cup s’mores Ritz cracker cookies: This is one of my favorite variations. Place a thin Reeces peanut butter cup on top of the marshmallow cream.
  • Caramel cracker s’mores: Drizzle a little caramel sauce over the marshmallow creme.
  • Toffee crunch s’mores cracker cookies: After dipping the crackers in melted chocolate, sprinkle with toffee bits.
  • White chocolate: Substitute the chocolate melts with white chocolate melts.

Storage Instructions

Store: Keep these Ritz cracker s’mores cookies in an airtight container for up to 5 days.

Freeze: These can be frozen in a freezer safe bag for up to a couple months. Let them thaw at room temperature.

S’mores Cracker Cookies

Ingredients 

  • 48 Ritz Crackers
  • ½ cup marshmallow creme
  • 10 ounce milk chocolate wafer melts or chocolate almond bark
  • ¼ cup graham crackers, crushed

Instructions 

  • Line a cookie sheet with wax paper. Place 24 Ritz crackers on the wax paper.
  • Place a small amount of marshmallow creme in the middle of each cracker.
  • Top with remaining Ritz crackers. Lightly press on the top cracker to help the marshmallow creme spread out.
  • Place the chocolate melting wafers in a microwave safe bowl. Warm in 30 second intervals in the microwave until the chocolate completely melts.
  • Place each cracker cookie on a fork. Dip in the melted chocolate until it's completely covered. Let any extra chocolate drip off.
  • Return the chocolate covered cracker cookie back on the wax paper.
  • Repeat until all of the cracker cookies have been dipped. Let them rest until the chocolate hardens.
