My pesto rice is a simple, flavorful side dish that transforms cooked rice into something special. Perfect for a busy weeknight or even special occasions, this rice recipe comes together with just four ingredients in about 30 minutes.

Sometimes I tend to get stuck in a dinner rut, making the same things over and over. One of our usual dinners is chicken and rice because it’s something everyone can agree on.

Several months ago I decided to change things up a little and made this pesto rice. It ended up being a huge hit with the family and it was so easy to make, just a couple of added steps to making plain rice.

Now my kids love using this rice to make chicken bowls, in wraps, or just as a side dish to things like hamburgers and fish. This rice recipe really goes with just about anything and works well for any occasion.

  • Rice – Use your favorite rice. I like using basmati or jasmine rice for this recipe because they are light and fluffy. Long grain rice or brown rice will also work.
  • Butter – A little unsalted butter adds a little richness to the rice.
  • Pesto – Your favorite premade pesto or homemade pesto will work for this rice recipe.
  • Parmesan – An optional topping, freshly grated parmesan cheese adds a wonderful layer of flavor.

Step one: Prepare your rice according to package directions. You can prepare your rice on the stove, rice cooker, or Instant Pot.

Step two: Stir in the melted butter to coat the rice.

Step three: Stir in the pesto. I recommend tasting to see if you would like to add any more pesto according to your taste.

Step four: Optional, add grated parmesan cheese to the top of the rice. Serve warm.

  • Nuts: Top with toasted nuts like pine nuts, walnuts, or slivered almonds.
  • Lemon juice: Add a little fresh lemon juice to give this rice bright, fresh flavor.

What to serve with pesto rice

This easy pesto rice can be used as a side dish or the base or a bowl recipe. Try serving alongside things like:

  • Chicken: Grilled chicken, roasted chicken, or even rotisserie chicken.
  • Beef: It’s great with steak, hamburgers, and meatballs.

Storage instructions
