    Garlic Butter Chicken with Riced Cauliflower and Broccoli Meal Prep

    Garlic butter chicken is a staple at our house. It is quick to cook up and can be paired with a variety of different sides like roasted broccoli or air fryer roasted potatoes. 

    We have been trying to incorporate more veggies into our family meals. Having them already chopped or even better, frozen, makes it easy when I am trying to get dinner together and need a quick side dish. 

    I decided to take advantage of the Publix “Cool Foods” promotion running from 3/16/19- 3/29/19 and stocked up on some of my favorite freezer products like these Green Giant Riced Veggies. They come in several varieties and are great for easy and low-cal meal prep.

    How to cook garlic butter chicken

    • Begin by placing chicken pieces in a medium bowl. Season with salt, ground black pepper, garlic powder, Italian seasoning, lemon zest, lemon juice and olive oil. Toss chicken until it’s all coated. 
    • Add butter and minced garlic to a large skillet. Melt butter over medium-low heat. Pour chicken into skillet and cook on medium heat until the chicken has started to turn golden brown and is cooked through. This usually takes about 5-6 minutes.

    • Remove chicken from skillet and set aside. Add more butter and the frozen riced cauliflower and broccoli to the skillet. Pour in chicken broth and cook until thawed and heated through. Season with salt. 
    • Place chicken back into the skillet and serve.

    Meal Prep

    If you’re making this meal for meal prep, let it cool and then place in the containers. This chicken will stay good for up to 2 days in the refrigerator. To reheat, place everything back in a skillet and heat through.

    Tips for Making Garlic Butter Chicken Meal Prep

    • I like using a garlic press to easily mince garlic. 
    • Double recipe to get 4 meal prep bowls.

    Ingredients

    • 1 1/2 pounds chicken breast cut into chunks
    • 1 tablespoon olive oil
    • 3 tablespoons butter
    • 1/2 teaspoon garlic powder
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
    • 1 teaspoon Italian seasoning
    • 2 tablespoons lemon juice
    • 1 teaspoon lemon zest
    • 1 (12 oz) Green Giant Riced Veggies- Cauliflower and Broccoli

    Instructions

    • Remove chicken from skillet and set aside. 
    • Add 1 tablespoon butter and frozen riced cauliflower and broccoli to the skillet. Pour in chicken broth and cook until thawed and heated through. Season with salt. 
    • Add chicken back in skillet to warm. Serve or divide into meal prep containers.
