My easy chicken tortellini casserole is one of my favorite meals to make during the week. It’s creamy, cheesy, and comes together with a few simple ingredients. When I want something comforting and filling, this casserole is at the top of my list.

One of my favorite things to grab at the grocery store is a bag of refrigerated tortellini. It’s super versatile and can be used in a variety of ways like this easy chicken tortellini casserole.
This is one of those meals that is hearty, cheesy, and just really hits the spot. It’s also a great way to use a rotisserie chicken, not to mention it makes the best leftovers. My oldest daughter even asked me to teach her how to make it before she heads off to college next year, which tells you just how much we love it.
I also love that this is essentially a dump and bake casserole. Just mix all of the ingredients together, dump it in the casserole dish, and bake. A simple and reliable recipe to hopefully make dinner time easy.

One of my favorite things about this chicken tortellini casserole recipe is that it can be made with some simple, shortcut ingredients.

- Chicken: Cooked, shredded or chopped chicken. This is a great recipe to use rotisserie chicken.
- Alfredo sauce: Since this is a dump and bake recipe, jarred Alfredo sauce keeps things simple. You can also use homemade Alfredo sauce. ***I like using one original Alfredo and one garlic Alfredo sauce to add a little extra flavor.
- Chicken broth: Broth helps to keep the tortellini moist in the casserole while it bakes.
- Tortellini: I like using refrigerated tortellini for this recipe. You can use frozen tortellini, the cooking time just needs to be increased.
- Frozen vegetables: Adds texture and color. You can leave these out if you prefer.
- Mozzarella: Shredded mozzarella melts over the top to add delicious cheesiness.
- Parmesan cheese: Grated parmesan adds extra flavor.
How to make chicken tortellini casserole
Step one: Preheat the oven to 375 degrees F. Spray a 9 x 13 casserole dish with non stick cooking spray.
Step two: Combine tortellini, Alfredo sauce, chicken broth, chicken, frozen vegetables, and half cup of mozzarella cheese.

Step three: Spread the mixture out in the prepared baking dish. Top with remaining mozzarella cheese and Parmesan cheese. Cover with foil and bake for 30 minutes.

Step four: Remove the foil and bake another 5 minutes or until the cheese starts to turn golden brown and bubbly.

Step five: Let the casserole rest for about 5 minutes and serve.

Variations
There are several ways to add different flavors to this chicken tortellini casserole recipe. Here are a few of my favorites:

- Buffalo chicken – Mix in buffalo sauce with the Alfredo sauce for some added heat.
- Pesto – Stir in some pesto to the Alfredo sauce for herbed flavor.
- Seasonings – Add even more flavor by mixing in a little poultry seasoning or Italian seasoning.

Storage
Store: Let the casserole cool and then store in an airtight container in the refrigerator. This will last 2-3 days in the refrigerator.
Freeze: Be sure to let the casserole completely cool. Wrap in plastic wrap tightly and freeze for up to 2 months. You can also store in freezer safe containers.
