This chicken tortellini casserole is a super simple dinner recipe. Cheesy tortellini with Alfredo sauce, cheese, and vegetables baked until nice and warm.

- 1 (20 ounce) refrigerated cheese tortellini
- 2 (15 ounce) jars Alfredo sauce
- ½ cup chicken broth
- 2 cups cooked chicken, shredded or diced
- 1 (12 ounce) frozen mixed vegetables
- 2 cups shredded mozzarella cheese
- ¼ cup parmesan cheese
Preheat the oven to 375 degrees F. Spray a 9 x 13 casserole dish with non-stick cooking spray.
In a large bowl, combine tortellini, Alfredo sauce, chicken broth, chicken, frozen vegetables, and 1/2 cup of mozzarella cheese. Stir to combine.
Spread the mixture in the prepared baking dish. Top with remaining shredded cheese and the Parmesan cheese.
Cover the casserole dish with foil. Bake for 30 minutes.
Uncover and cook another 5 minutes.
Let the casserole rest for about 5 minutes and serve.
- Don't precook the tortellini. The refrigerated tortellini will cook while it bakes.
- Let it rest a few minutes before serving.
- Top with a little fresh parsley to add color and fresh flavor.
