My buffalo chicken dip bites takes everything you love about cheesy buffalo dip and turns it into the perfect bite sized appetizer. Tostitos Scoops are are filled with a cheesy buffalo chicken mixture and then baked until warm. Quick and easy to make, these are perfect for a game day appetizer, party, and more.

One of my favorite things about football season is all the delicious food we make to watch the games. Give me a table full of dips, sliders, and bite sized appetizers and I’m happy.

My Iowa Party Bites have always been a favorite of family and friends so this football season I decided it was time to make another appetizer using Tostitos Scoops.

Since buffalo chicken dip is always a favorite, I decided to make these buffalo chicken dip bites. Each chip is filled with cheesy buffalo chicken mixture and then baked until melted and warm.

These bites are so easy to grab and eat, the ultimate finger food. They don’t have to be just for game days, they are great for a late night snack, parties, or even a holiday appetizer table. My biggest recommendation, double the recipe because they always disappear fast.

Ingredients

Buffalo chicken dip bites are the perfect way to use rotisserie chicken.

  • Scoops tortilla chips: These are the perfect chip to hold the buffalo chicken filling.
  • Shredded chicken: This is a great recipe to use rotisserie chicken or leftover chicken.
  • Cream cheese: Softened cream cheese holds everything together and makes the filling perfectly creamy.
  • Buffalo sauce: Use your favorite buffalo sauce. I like using Frank’s Red Hot Buffalo Sauce.
  • Shredded cheese: I typically use a blend of colby jack cheese. You can substitute with cheddar cheese, monterey jack, or a cheddar blend.
  • Ranch seasoning: A packet of ranch seasoning adds some great flavor to this recipe.
  • Optional toppings: Top with diced green onions for a little color and freshness, crumbled blue cheese, or a drizzle of ranch dressing.

How To Make Buffalo Chicken Dip Bites

  1. Preheat the oven to 350 degrees F. Line a cookie sheet with foil and lightly spray with non-stick cooking spray.
  2. In a large bowl, mix together the softened cream cheese and ranch dressing.

  1. Stir in shredded chicken, buffalo sauce, and shredded cheese.
  2. Fill the Tostitos Scoops the chicken mixture and place on the prepared cookie sheet.

  1. Bake for about 10 minutes to melt the cheese.
  2. Serve the bites warm.

Heather’s Recipe Tips

  • Softened the cream cheese before mixing.
  • Don’t overfill the chips. Use about a heaping tablespoon of mixture per chip.
  • You can adjust the buffalo sauce to taste. I would not consider these very spicy. If you would like yours a little spicier you can add more or less if you prefer.
  • If you are serving a large crowd, you can double the recipe.

Variations

There are a few ways to change up these buffalo chicken bites.

  • Blue cheese: Substitute the ranch seasoning with a quarter cup of blue cheese dressing.
  • Extra spicy: If you want your bites spicy, add chopped jalapenos to the mixture or a dash of hot sauce.
  • Cheese: You can substitute the shredded cheese with cheddar cheese, pepper jack cheese, monterey jack cheese, or mozzarella.
  • Jalapeno popper buffalo chicken bites: Mix in cooked and crumbled bacon and diced jalapenos into the chicken filling.
  • Celery: Mix diced celery into the chicken mixture.

Storage Instructions

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Remember, the longer the chips sit, the softer they will become.

Reheat the leftovers in the oven or air fryer at 350 degrees until the cheese is warm.

I don’t recommend freezing these bites because the chips don’t thaw very well. They become too soggy.

Yes, you can heat these in the air fryer at 350 for 3-4 minutes.

Can I use different chips?

I like using the Scoops chips because they hold the filling really well and are sturdy enough to not fall apart.

Do I have to use ranch seasoning?

No, you can leave out the ranch seasoning if you like. You can also substitute with a quarter cup of blue cheese dressing if you prefer that flavor.

Buffalo Chicken Dip Bites are an easy, bite sized appetizer full of creamy, cheesy buffalo chicken. Buffalo chicken dip is spooned into crunchy Tostitos Scoops and baked for a simple finger food.

Ingredients 

  • 8 ounce cream cheese, softened
  • 1 ounce packet ranch seasonings
  • ½ cup buffalo sauce
  • 2 cups cooked shredded chicken
  • 1 cup shredded colby jack cheese
  • 30 Tostitos Scoops chips

Instructions 

  • Place the softened cream cheese and ranch seasonings in a large bowl. Mix with an electric mixer until the seasonings are combined and creamy.
  • Stir in the cooked, shredded chicken, shredded cheese, and buffalo sauce.
  • Line a cookie sheet with foil and lightly spray with non stick cooking spray.
