Easy Spanish Rice
This is one of my favorite side dishes. It reminds me of growing up and being so excited it was fajita night. It was one of my favorite recipes my mom passed down and now my kids love it too.
The best part, one pot. That’s right, just put all of your ingredients into an oven safe pot, bake and your done. The rice turns out perfect every time with minimal effort.
How to serve Simple Spanish Rice
There are so many ways to use this rice, as a side dish, in a burrito bowl, or a breakfast burrito just to name a few. This rice in a burrito with scrambled eggs and cheese, AMAZING! Also, if Jay is traveling for a few nights, I make this one pot Spanish rice and have a black bean or chicken burrito bowl. Top the rice with beans, a little sour cream, avocado, cheese and jalapenos. So good and it makes enough to have leftovers the next night.

One Pot Spanish Rice
Ingredients
- 1 cup chopped onion
- 1/2 cup chopped red pepper
- 14.5 oz can petite diced tomatoes
- 8 oz can tomato sauce
- 1 teaspoons sugar
- 1.5 teaspoons salt
- 1 1/2 cup uncooked white rice
- 1 teaspoon cumin
- 1 teaspoon chopped cilantro (optional)
- 1 3/4 cup water
Instructions
- Preheat oven to 350 degrees
- Grease an oven safe casserole dish
- Add all of the above ingredients
- Cover dish
- Bake for 1 hour
- Add cilantro for garnish
