My lemon fluff recipe is like sunshine in a bowl. Bright lemon flavor and creamy, fluffy texture, it’s the perfect dessert for spring or summer. An easy recipe that comes together in minutes. Wonderful for holidays, family gatherings, potlucks, and more.

Lemon desserts are some of my favorites. The bright citrus flavor with just the right amount of tang always reminds me of warm weather and sunny days. This lemon fluff recipe is the perfect example with it’s fresh lemon flavor and light, creamy texture.

I grew up eating fluff recipes that my grandmother loved to make. There are so many great variations but this lemon version is one I love especially in the spring and summer months.

It’s one of my go to desserts to make for Easter brunch or to bring to a cookout. Simple to make and always a crowd pleaser.

Lemon fluff ingredients

After some testing, I prefer using lemon pudding mix instead of lemon JELL-O mix. It creates a creamier texture and gives the dessert a wonderful, rich flavor.

  • Lemon pudding mix: Make sure to get instant lemon pudding mix.
  • Crushed pineapple: A can of crushed pineapple is used. Do not drain the pineapple.
  • Lemon juice: This adds a delicious brightness
  • Lemon zest: Adds even more amazing lemon flavor.
  • Mini marshmallows: You can use white mini marshmallows or the colorful mini marshmallows.
  • Cool Whip: Adds cool and creamy texture.

How to make lemon fluff

  1. Mix together the lemon pudding mix and crushed pineapple. Make sure NOT to drain the juices.
  2. Gently fold in the thawed whipped topping.

  1. Stir in the mini marshmallows until combined.
  2. Cover and refrigerate for a least an hour before serving.

I recommend chilling this before serving to let the flavors come together and it also helps the texture.

Heather’s recipe tips

  • Chill before serving. I like to let it chill for at least an hour.
  • Gently fold ingredients together. Don’t over mix the fluff. This helps to keep the creamy texture.
  • Use fresh lemon juice. This will add the perfect amount of lemon flavor.
  • If you need to feed a crowd, you can easily double this recipe.

Variations

  • Try adding sweetened shredded coconut for more tropical flavor.
  • Top with crushed graham crackers or vanilla wafers.
  • Add in fresh berries like blueberries or strawberries.
  • For a little crunch you can mix in chopped pecans.

No, you don’t have to chill it, but I find that it helps the fluff come together better.

Can I use lemon JELL-O instead of pudding.

You can but the lemon pudding make this dessert much creamier.

Lemon Fluff

Ingredients 

  • 1 (3.4 ounce) box instant lemon pudding
  • 1 (20 ounce) crushed pineapple
  • 1 tablespoon lemon juice
  • lemon zest of half a lemon
  • 1 (8 ounce) whipped topping, thawed
  • 2 cups mini marshmallows

Instructions 

  • Stir together the lemon pudding mix and crushed pineapple in a large bowl.
  • Mix in the lemon juice and lemon zest.
  • Use a spatula to fold in the whipped topping and mini marshmallows.
  • Cover and chill in the refrigerator for at least an hour before serving.
