My chocolate covered cherry brownie bites are rich, fudgy, and filled with a sweet cherry center. Inspired by classic chocolate covered cherries, these treats are great for holidays, parties, or when you want a delicious chocolate dessert.

Brownies have always been a favorite dessert in our house, especially for my daughter Elle. She can smell a pan of brownies baking from her room. That’s why it is no surprise that she loves these chocolate covered cherry brownie bites.
It all started when I decided to make her some chocolate covered brownie pops, similar to a cake pop, for her birthday. On a whim, I ended up adding a maraschino cherry for a surprise pop of color and flavor and they turned out being a hit. She and her friends loved them and now I get requests to make them for special occasions.
Now these bites have become one of those special treats that I make for holidays, birthdays, and other celebrations. They are perfectly fudgy and the sweet cherry makes them feel extra special.

Make these chocolate covered cherry brownie bites with simple ingredients that you might already have in your kitchen.

- Brownie mix: Use your favorite boxed brownie mix. I recommend using a fudgy style brownie mix because it holds together well.
- Vegetable oil: This adds moisture to the brownies.
- Eggs: Two large eggs are used to bind the brownie batter together.
- Water: A little water helps to moisten the brownie batter.
- Almond extract: This is an optional ingredient. Almond extract adds to the classic chocolate covered cherry flavor.
- Chocolate frosting: You will use the chocolate frosting to bind the crumbled brownie mixture together.
- Almond bark: Chocolate almond bark is used for the out shell of the brownie bites.
- Maraschino cherries: I recommend getting the stemless maraschino cherries if you can find them. They go in the center of each brownie bite.
How to make chocolate covered cherry brownie bites

Step one: Preheat the oven to 350 degrees F. Line a brownie pan with parchment paper and spray with non stick cooking spray.
Step two: Stir together brownie mix, eggs, vegetable oil, water, and almond oil until combined. Spread in the baking pan.

Step three: Bake the brownies according to the box directions. Let the brownies cool.

Step four: Crumble up the brownies and place in a large bowl. Add the chocolate frosting. Stir to combine.

Step five: Scoop the brownie bite mixture in a cookie scoop or tablespoon. Roll into a ball.

Step six: Place a cherry in the mixture.

Step seven: Roll the mixture completely around the cherry. Place on a baking sheet lined with wax paper.

Step eight: Place the balls in the freezer for about 30 minutes.

Step nine: Melt the almond bark in the microwave according to directions. Dip the balls into the chocolate and then place back on the wax paper.

Step ten: Place the balls in the refrigerator to chill. Serve after the coating hardens.

- Don’t over bake the brownies. You want to make sure you don’t have any hard bits in the bites.
- Blot the cherries dry. This will help prevent the chocolate covered brownie bites from getting mushy and watery.
- If you have an allergy in your house, you can leave out the almond extract.
- Don’t skip chilling the brownie bombs before coating in the almond bark. This will help them stay together.
- I recommend melting the almond bark in a glass measuring up to make it easier to dip.

Chocolate Covered Cherry Brownie Bites
Ingredients
- 1 brownie mix (Fudge brownie mix works best.)
- 2 eggs
- ½ cup vegetable oil
- ¼ cup water
- ½ teaspoon almond extract
- 1 (12 ounce) tub of chocolate frosting
- 24 maraschino cherries, patted dry
- 1 (20 ounces) chocolate almond bark
Instructions
- Preheat the oven to 350 degrees F. Spray a 7 x 11 brownie pan win non-stick cooking spray. (You can also use a 9 x 13 baking dish.)
- Place the brownie mix, eggs, water, vegetable oil, and almond extract in a large bowl. Mix the ingredients until combined.
- Spread the brownie batter in the prepared brownie pan. Bake according to the box directions. Let the brownies completely cool.
- Line a baking sheet with parchment paper or wax paper.
- Crumble the brownies and put them in a large bowl. Stir in the chocolate frosting.
- Scoop a little over a tablespoon of the brownie mixture. Roll the mixture into a ball. Fold the ball over a cherry to completely cover the cherry. Place on the prepared baking sheet and continue to make the bites.
- Place the tray of brownie bites in the freezer for about 30 minutes.
- Melt the almond bark in the microwave according to the package directions.
- Carefully dip the brownie bites into the melted almond bark using a fork. Place back on the baking sheet.
- Continue coating each brownie bite in the melted almond bark. Refrigerate until set.
