    Turkey quinoa and spinach meatballs

    Turkey quinoa and spinach meatballs are a flavorful, protein packed meal. Made with ground turkey, quinoa and spinach, they are great with pasta, spaghetti squash or as an appetizer.

    Meatballs are one of my go-to meals. These Basic Meatballs, and Chicken Pesto Meatballs are some of our favorites.

    Turkey quinoa and spinach meatballs have been on our household menu lately. I know I have been on a bit of a quinoa kick, but it is one of those ingredients that can be used in many different recipes from muffins to salads adding bulk, protein and fiber. 

    HOW TO MAKE TURKEY QUINOA MEATBALLS

    These turkey meatballs don’t require many ingredients: ground turkey, cooked quinoa, frozen spinach, egg, soy sauce and spices.

    Combine all of the ingredients in a bowl. Roll the mixture into one inch balls and place on a baking sheet. I like to place mine on a wire rack that sits on the baking sheet but you can also place them on an aluminum foil lined baking sheet.

    Bake for approximately 25 minutes or until slightly browned and cooked through.

    HOW TO SERVE MEATBALLS

    These little baked meatballs are really versatile and can be served in many different ways. Here are a few ways I like to use them.

    • with pasta and marinara sauce
    • with spaghetti squash and sauce
    • cut in half and placed in a Stromboli
    • on pizza
    • meatball sub
    • cocktail meatballs served with BBQ sauce

    COOKS TIPS

    • I love using my rice cooker to cook quinoa. 1 cup quinoa to 2 cups liquid. I usually use water or chicken broth for a little added flavor.
    • Be careful not to over mix ingredients. This will result in tougher meatballs.
    • Make sure to squeeze all of the extra liquid out of cooked frozen spinach.
    • These can also be made with ground chicken or ground beef. 

    CAN YOU FREEZE TURKEY MEATBALLS

    Yes! You can freeze these baked turkey meatballs but placing them on a baking sheet lined with parchment paper and freeze. After they are frozen, place in a freezer bag. Defrost and bake at 350 degrees F until heated through to eat.

    Ingredients

    • 1 lb ground turkey
    • 1 cup cooked quinoa
    • 1/2 cup minced onion
    • 3 cloves garlic minced
    • 1/2 cup frozen chopped spinach, thawed
    • 1 tablespoon Italian Seasoning
    • 2 tablespoons low sodium soy sauce
    • 1 egg, beaten

    Instructions

    • Preheat oven to 350 degrees F.
    • Place a rack on baking sheet and coat with non-stick cooking spray. (You can also place directly on greased baking sheet or on foil.
    • In a large bowl, combine ground turkey, cooked quinoa, onion, seasoning, soy sauce, garlic and egg.
    • Mix until well combined. Form mixture into 1 inch balls and place on baking sheet.
    • Bake for 25 minutes or until cooked through.
