My gingerbread Chex mix tastes like the holidays in every bite. Made with crunchy cereal, crisp gingersnap cookies, and a cozy blend of warm spices. It’s a sweet take on a classic Chex mix that is sure to become a holiday favorite.

Each year I get so excited when the tins of gingersnaps appear at our grocery store. There is something about the taste and smell that puts me in the holiday spirit. I love dipping them in my hot tea but I really love breaking them up and putting them in this gingerbread Chex mix.
This holiday snack mix has all of the classic flavors of gingerbread but it an easy snack. Cereal is coated in a buttery brown sugar and molasses glaze and then tossed with gingersnap cookies.

This gingerbread Chex mix recipe is simple to make and easy to customize.

- Chex Cereal: You can use Corn Chex, Rice Chex, or Honey Nut Chex.
- Golden Grahams: Adds delicious warm, cinnamon flavor to this mix.
- Gingersnap cookies: I like using the wafer thin gingersnap cookies to add that incredible gingerbread flavor.
- Butter: Unsalted butter is used to make the Chex mix coating.

How to make gingerbread Chex mix

- Put the butter, molasses, brown sugar, cinnamon, ginger, nutmeg, and cloves in a microwave safe bowl. Microwave for about 1 minute or until the butter is melted.

- Mix the Chex and Golden Grahams in a large bowl or pan. Pour the butter mixture over the cereal and toss to completely cover the cereal. Keep in the roasting pan or spread the cereal out on 2 baking sheets lined with parchment paper.

- Bake for 10 minutes. Make sure to stir halfway through cooking.

- Stir in the broken gingersnaps. Let the mixture cool.
- The next step is optional. You can drizzle some melted white chocolate over the top of the mixture and add sprinkles for an extra, festive touch.

Gingerbread Chex Mix
Ingredients
- 3 cups Corn Chex Cereal or Rice Chex, Wheat Chex, Honey Nut Chex
- 3 cups Golden Grahams Cereal
- ½ cup unsalted butter
- 2 tablespoons molasses
- ¼ cup light brown sugar
- ½ teaspoon cinnamon
- ½ teaspoon ginger
- ⅛ teaspoon cloves
- ⅛ teaspoon nutmeg
- ginger snap cookies, broken
- 1 cup white chocolate melts optional
- ¼ cup sprinkles optional
Instructions
- Preheat the oven to 275 degrees F. Line 2 baking sheets with parchment paper. (Or use a large foil roasting pan.)
- Place the Chex and Golden Grahams in a large bowl.
- Add the butter, molasses, brown sugar, cinnamon, ginger, cloves, and nutmeg to a microwave safe bowl. Microwave for 1 minute. Stir. If the butter has not melted, microwave another 15 seconds.
- Pour the butter mixture over the cereal. Stir to make sure all of the cereal is coated.
- Spread the cereal out on the prepared baking sheets, or leave in the foil pan.
- Bake for 10 minutes, stirring halfway through cooking.
- Remove from the oven and stir in the broken gingersnap cookies.
- The last step is optional. Let the mixture cool. Place the white chocolate melts in a microwave safe bowl.
- Melt the chocolate in 30 second intervals until the chocolate is melted.
- Drizzle the white chocolate over the Chex mix. Add sprinkles. Let the chocolate set and then serve.
