When I want to a dip that I know my friends and family will love, I make this easy fiesta corn dip recipe. It can be made in under 10 minutes and is the perfect dip for parties, game day, or anytime you need a quick appetizer.

This is also a great recipe that you can make ahead of time and just stick it in the refrigerator. I usually serve it with chips but it’s also great with cut up veggies or crackers.

The ingredients in the fiesta corn dip bring so much flavor.

  • Sour cream: The creamy base for this dip.
  • Mayonnaise: A little mayonnaise adds great flavor and extra creaminess.
  • Fiesta ranch seasoning: You can usually find this with the ranch seasoning. If your store does not carry Fiesta mix, you can substitute with ranch seasoning or half ranch seasoning and half taco seasoning.
  • Mexicorn: Canned Mexicorn or Southwest style corn adds great flavor. Make sure to drain the corn well.
  • Rotel: A can of diced tomatoes with green chilis.
  • Green onions: Diced green onion adds color and mild onion flavor.
  • Cheese: Shredded mild cheddar cheese is used for texture and flavor. You can substitute with a Mexican blend, colby jack, or monterey jack cheese.

How to make fiesta corn dip

Step one: Add the sour cream, mayonnaise, Fiesta seasoning to a bowl. Stir to combine. Mix in the Mexicorn, ROTEL, cheese, and green onions.

Step two: Stir well to combine.

Step three: Cover the bowl and refrigerate until ready to serve.

Heather’s recipe tips

  • Drain the corn and ROTEL well. It’s important to remove any excess liquid so that the dip doesn’t become watery.
  • Don’t skip the chill time. I recommend refrigerating the dip for at least 30 minutes to allow the flavors to really come together.
  • If you want a more colorful presentation, you can top with dip with extra corn, shredded cheese, and green onions.

Variations

You can make this fiesta corn dip your own with a few changes.

Seasonings: Try substituting the Fiesta Ranch Seasoning with ranch seasoning or taco seasoning.

Mix ins: Stir in a can of drained black beans, black olives, shredded chicken, or even diced avocado.

Serving suggestions

I usually serve my corn fiesta dip with things like tortilla chips, corn chips, Doritos, or crackers. It’s also great with vegetables and pita chips.

Storage instructions

Store any leftover dip in an airtight container or bowl in the refrigerator for up to 3 days. I do not recommend freezing this dip.

Fiesta Corn Dip is a simple, creamy dip that is full of flavor. Made with corn, ROTEL, cheese, and fiesta seasonings. This is a dip that can be put together in about 5 minutes

Ingredients 

  • 16 ounce sour cream
  • ½ cup mayonnaise
  • 1.1 ounce Fiesta ranch seasoning
  • 11 ounce mexicorn, drained
  • 10 ounce Rotel, drained
  • 1 ½ cups shredded mild cheddar cheese
  • 2 green onions, diced

Instructions 

  • Place the sour cream, mayonnaise, and fiesta ranch seasoning in a large bowl. Stir together to combine.
  • Stir in the drained mexicorn, drained ROTEL, shredded cheese, and green onions.
  • Cover and refrigerate until ready to serve.
