My copycat version of Chicken Salad Chick pimento cheese is simple, delicious, and packed with creamy, cheesy flavor. This Southern style spread is made with just a few ingredients and is great for sandwiches or as a dip for your next gathering.

Growing up in Southwest Virginia, pimento cheese was present at just about every gathering I can remember.

One of my favorite fast casual restaurants, Chicken Salad Chick, has their own version of pimento cheese that I have always loved. They use a blend of sharp cheddar and pepper jack cheese, which I think gives it such great flavor.

Since I don’t live close to one of the restaurants anymore, I decided to make my own copycat version. After some testing, I think this version comes pretty close to what you might find at the restaurant. The perfect amount of creamy, pimento cheese flavor that is great with crackers, veggies, or as a sandwich.

  • Mayonnaise: I recommend using Duke’s mayonnaise to get close to the flavor of the original.
  • Pimentos: Pimento peppers are mild with a hint of sweetness. You can adjust the amount of pimento peppers to your taste.
  • Garlic powder: A little garlic powder gives this recipe a little extra flavor without being to much.
  • Salt and pepper: Classic seasoning that brings everything together.

How to make Copycat Chicken Salad Chick pimento cheese

Step one: Shred the cheddar cheese and pepper jack cheese. Place the cheese in a large bowl with the mayonnaise.

  • My number one tip is to freshly shred your cheese. This makes a big difference with the flavor and texture.
  • Drain the pimentos well. This will help make sure your spread doesn’t become to watery.
  • Adjust the pimentos. You can adjust the amount of peppers to your taste.
  • Adjust the mayonnaise. You can add more mayonnaise depending on how creamy you like your homemade pimento cheese.
  • Double the recipe for a large crowd.

Variations

Spicy: Chicken Salad Chick has a spicy version of their pimento cheese. You can mix in diced jalapenos to make a spicy version at home.

Bacon: Stir in crumbled bacon for some smokey flavor.

Cream cheese: To make a thicker pimento cheese, add in 4 ounces of softened cream cheese.

This copycat Chicken Salad Chick pimento cheese recipe is simple, flavorful, and delicious. Made with freshly shredded cheese, this pimento cheese is great served as a dip or on a sandwich.

Ingredients 

  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup shredded pepper jack cheese
  • ½ cup mayonnaise
  • 1 (4 ounce) diced pimentos, drained
  • ¼ teaspoon garlic powder
  • teaspoon salt
  • teaspoon ground black pepper

Instructions
