Yeast plays an important role when it comes to baking. You want to make sure you are using the correct amount to achieve a good dough rise and also texture.

How much yeast is in a packet?

Instant yeast and active dry yeast are typically packaged in a packet and can usually be found in the baking aisle of the grocery store. Often they come packaged with 3 individual packets together.

Each individual yeast packet is 1/4 ounce (7 grams) or 2 1/4 teaspoons of yeast. A packet of yeast can also be measured as 3/4 tablespoon.

If you are an avid baker and use yeast often it can also be bought in larger quantities packaged in jars or bags.

What is yeast?

While yeast is a common ingredient in baking, you may wonder what exactly is yeast?

Yeast is actually a living, single-cell organism that helps dough rise through the fermentation process. It also helps to add flavor and texture to the dough.

Many recipes call for adding lukewarm, not hot, water to yeast to reactivate it. When the yeast is mixed into the bread dough it helps to break down starch into simple sugars. Carbon dioxide and ethyl alcohol are then made which creates bubbles in the dough that helps it to rise.

Types of yeast

There are several different types of yeast including fresh yeast, rapid rise, instant and active dry yeast. Along with types there are also several popular brands like Fleischmann’s yeast and Red Star.

Active Dry Yeast

This is a very common type of yeast in many different recipes. Manufacturers remove water from live yeast to make active dry yeast. One packet of active dry yeast has 2 1/4 teaspoons of yeast.

Instant Yeast

Instant yeast is a dry yeast that is a finer granule than active dry yeast. It also dissolves faster and can usually be mixed in with dry ingredients when baking.

RapidRise Yeast

RapidRise yeast is made by the brand Fleischmann’s. It is sold in packets of 3 and can be found in the baking aisle.

RapidRise is different than instant yeast because it’s a fast rising yeast and it works for recipes that require one quick rise.

Fresh Yeast

Fresh yeast is also called cake yeast. It comes in block form, not tiny granules.

Fresh yeast doesn’t last as long and should always be kept in the refrigerator.

Cake yeast or fresh yeast also has a stronger flavor and is popular among professional bakers.

How many packets of yeast do you need for baking?

Different recipes will call for varying amounts of yeast however, it’s common to call for one packet. If you have a jar of yeast and the recipe calls for one individual packet, you will need 2 1/4 teaspoons of yeast.

How to store yeast?

Keep packets of unopened yeast in a cool, dry, dark place. Make sure it is away from sunlight where it could potentially get hot. Yeast packets have a long shelf life of about 18 months.

After a packet of yeast has been open, store it in an airtight container or bag in the refrigerator. This helps to ensure it doesn’t loose its potency. An open package of yeast will last for about 4 months.

You can also freeze yeast to prolong the shelf life. It will stay good in the freezer for up to 2 years.

Not sure if your yeast is still good? First check the expiration date on the packet or jar. Test it by stirring together one packet of yeast with 1/4 cup of water and 1 teaspoon of sugar. If it starts to foam after 10 minutes, it is good to use.
