- Sour cream: Sour cream is the base for this creamy dip.
- Fiesta ranch seasoning: You can usually find the Hidden Valley Fiesta Ranch Dip Mix by the ranch dressing seasonings at the grocery store.
- Rotel: Diced tomatoes and green chilies add texture and flavor.
- Shredded cheese: I like using a Mexican cheese blend but you can substitute with shredded cheddar cheese or shredded Monterey Jack cheese.
Note: If you can’t find fiesta ranch dip seasoning, mix together a tablespoon of ranch seasoning and a tablespoon of taco seasoning mix.

- Stir together sour cream and fiesta ranch seasoning.


- Stir in ROTEL and shredded cheese. You do not need to drain the ROTEL.

Heather’s recipe tips
- If you can’t find fiesta ranch seasoning, you can combine 1 tablespoon of ranch seasoning with 1 tablespoon of taco seasoning.
- Want a thicker dip? You can drain the can of ROTEL for a thicker dip.
- Chill before serving. While you can serve this immediately, I recommend chilling for at least an hour to let the flavors blend together.

Variations
- Corn: If you would like a little extra color and texture, add a can of drained corn or drained Mexi-corn.
- Black beans: Rinsed, drained black beans make this dip a little heartier and give it southwest flavor.
- Jalapenos: If you would like it spicier, you can add diced jalapenos to the dip.
