Rolo stuffed Ritz crackers are a super simple sweet and salty treat. Butter crackers sandwich a caramel filled Rolo candy and then dipped in white chocolate. A great treat for the holidays, parties, or just because.

If I need a simple treat that I know everyone is going to love, I often turn to these Rolo stuffed Ritz crackers. They are so easy to make and can be customized with colorful chocolate or sprinkles for any occasion.

This is one of those recipes that is perfect when you need something quick for a last minute treat, a holiday party, baby shower, and more.

Rolo treats are also great for a simple food gift or bake sale. Package them in a nice tin or bag for sharing. I like adding them to cookie trays, dessert platters, or a sweet treat in my kids lunch box.

  • Ritz crackers: Buttery Ritz crackers are used for this recipe.
  • Chocolate: This is an optional ingredient. You can use white chocolate, milk chocolate, or dark chocolate.
  • Sprinkles: Another optional ingredient to add festive color.

How to make Rolo stuffed Ritz crackers

  1. Place Ritz crackers on a baking sheet. I like lining mine with parchment paper for easy cleanup. Top each cracker with a Rolo candy.

  1. Place the baking sheet in a 350 degree oven for 3 minutes. Top each cracker with another Ritz cracker and lightly push down. Let them completely cool.

  1. Melt the white chocolate in the microwave in 30 second intervals until melted. Dip each cracker into the chocolate and then place back on the parchment paper or wax paper.
  2. Add sprinkles while the chocolate is still melted.

  1. Let the chocolate on the crackers set and then serve.

Heather’s recipe tips

  • Be sure to use fresh Ritz crackers so they aren’t stale.
  • Don’t have the Rolos in the oven for too long. If they are in the oven too long they will completely melt over the crackers.
  • Make sure to be gentle when pressing the Rolos between the cookies so the caramel doesn’t spill out.
  • Let them cool before dipping in the chocolate.

Storage

Rolo Stuffed Ritz Crackers

Rolo stuffed Ritz crackers are an easy sweet and salty treat. Buttery crackers are filled with a melted caramel Rolo and then covered in chocolate. These Rolo Ritz crackers are simple to make and so delicious. Perfect bite for a party, holiday treat, and more.

Ingredients 

  • 48 Ritz crackers
  • 24 Rolo candies
  • 10 ounces white chocolate melting wafers
  • ¼ cup sprinkles

Instructions 

  • Preheat the oven to 350 degrees F.
  • Place 24 Ritz crackers on a baking sheet. Top each cracker with a Rolo candy.
  • Put in the oven for 3 minutes.
  • Remove from the oven and top each Rolo with another Ritz cracker. Gently push the cracker down to smash the Rolo. Let them completely cool.
  • Melt the white chocolate in the microwave in 30 second intervals until the chocolate melts.
  • Use a fork to help dip each Rolo Ritz cracker in the white chocolate. Once it's coated in chocolate place on parchment paper or wax paper. Top with sprinkles.
  • Continue until each Rolo Ritz cracker is covered in white chocolate. Let them sit until the chocolate hardens. You can place in the refrigerator to help speed up the setting process.
