My slow cooker reuben dip is a delicious dip inspired by the popular sandwich. Made in the crockpot, it’s perfect to serve at parties and game days.

My husband Jay is a huge fan of reuben sandwiches, so this slow cooker reuben dip with cream cheese is popular in our house. Anytime I’m planning what to eat while watching our college football game, he is quick to ask if I’m making “that reuben dip”.

This warm dip has all of the classic ingredients you find in the sandwich, corned beef, Swiss cheese, and sauerkraut. All the flavors we love, without having to make individual sandwiches.

I love that you can just throw all of the ingredients in the slow cooker and let it do all the work. Little effort but big flavor, it’s a great dip recipe for any occasion.

Ingredients

Crockpot reuben dip can be made with similar ingredients to the classic sandwich.

  • Corned beef: I like using deli sliced corned beef but feel free to use leftover corned beef or pre packaged corned beef. If you can’t find corned beef, you can substitute with pastrami.
  • Cream cheese: Softened cream cheese is the base for this creamy dip.
  • Sour cream: Adds a hint of tanginess to the dip.
  • Thousand Island dressing: Thousand Island dressing gives this dip the signature sandwich flavor.
  • Swiss cheese: Freshly shredded Swiss cheese
  • Sauerkraut: Make sure to drain and squeeze the sauerkraut to help prevent it making the dip soggy.

Tip: I like adding a tablespoon of horseradish for a little kick of spiciness.

How to make slow cooker reuben dip

Step one: Spray the slow cooker with non stick cooking spray.

Step two: Place the corned beef, cream cheese, sour cream, Thousand Island dressing, Swiss cheese, and sauerkraut in the slow cooker.

Step three: Cook on low setting for 1 1/2 – 2 hours, or until the cheese has melted.

Step four: Serve this dip warm with things like vegetables, crackers, toast, rye bread, or pumpernickel bread.

Heather’s recipe tips

  • Soften the cream cheese. I recommend letting the cream cheese soften before cooking. This will help it melt smoothly.
  • Remove any excess liquid from the sauerkraut. Make sure to drain it and squeeze the sauerkraut to get rid of any liquid.
  • Cook on low heat. I recommend cooking the dip on low heat so that it doesn’t burn.
  • Stir halfway through cooking. This will help it cook evenly.
  • If you are making this dip for a large crowd, you can double the recipe.

Variations

Make this slow cooker reuben dip with cream cheese recipe your own with a few changes. Here are some suggestions:

  • Turkey reuben dip: Substitute the corned beef with turkey.
  • Spicy dip: Add a little heat to the dip with 2 tablespoons of horseradish sauce or 1 teaspoon of red pepper flakes.
  • Dressing: You can substitute the Thousand Island dressing with Russian dressing.
  • Mustard: Add some extra flavor with 2 tablespoons of Dijon mustard or brown mustard.

Storage instructions

Let the sauerkraut dip completely cool and then transfer to an airtight container. Refrigerate for up to 3 days.

Reheat the dip back in the slow cooker, in the microwave, or in the oven at 350 degrees.

I don’t recommend freezing this reuben dip. It does not thaw very well.

Slow cooker reuben dip is a delicious warm dip inspired by the classic sandwich. A cheesy dip filled with corned beef and sauerkraut, this is a great dip for parties, game day, and more.

Ingredients 

  • ½ pound deli sliced corned beef, diced
  • 1 (8 ounce) cream cheese, cubed
  • ½ cup sour cream
  • ¼ cup Thousand Island dressing
  • 1 ½ cups Swiss cheese, shredded
  • ½ cup sauerkraut, drained

Instructions 

  • Spray the inside of the slow cooker with non-stick cooking spray.
  • Place the corned beef, cream cheese, sour cream, Thousand Island dressing, Swiss cheese, and sauerkraut in the slow cooker.
  • Cover the slow cooker and cook on low heat for 1.5 – 2 hours or until the cheese has melted. I recommend stirring halfway through cooking.
  • Serve this dip warm.
