Strawberry Blossoms Recipe

- 1 (15.25 ounce) strawberry cake mix
- 1 (3.5 ounce) instant vanilla pudding mix or instant strawberry pudding mix
- 4 eggs
- ¾ cup vegetable oil
- ½ cup water
- 3 cups powdered sugar
- 5 tablespoons milk
- 1 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Spray mini muffin pans with non stick cooking spray.
Place eggs, cake mix, pudding mix, vegetable oil, and water in a mixing bowl. Mix together until the ingredients are fully combined.
Spoon the batter into the prepared mini muffin pans. Only fill about half way to three quarters full. Bake for 12-15 minutes.
While the strawberry blossoms are baking, whisk together powdered sugar, vanilla extract, and milk to make the icing.
Once they have baked, remove from the oven and let cool in the pans for a few minutes. Carefully remove them from the pan and let cool.
Dip the strawberry blossom cakes in the icing and then place on a wire rack or parchment paper to set.
