- 1 pound chicken tenders or chicken breast
- 8 cups chicken broth
- 1/2 cup mayonnaise
- 1 stalk celery, diced
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon celery salt
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon salt
Add chicken broth to a large pot and bring to a boil. Place the chicken into the boiling broth. Turn the heat to medium and cook for 10 minutes or until internal temperature reaches 165 degrees F. Note: If you are cooking large chicken breasts, the cooking time might be longer.
Place the cooked chicken tenderloins in a food processor. Pulse to shred the chicken being sure not to over pulse. You could also use a fork to shred the chicken.
Place mayonnaise, garlic powder, onion powder, celery salt, salt, and pepper into a bowl. Stir to combine.
Mix in shredded chicken and diced celery.
Cover and refrigerate until ready to serve.
- Mayonnaise: The best part about cooking at home is that you are in control of your ingredients. You can use less or more mayonnaise depending on your preference.
- Chicken: To shred the chicken you can use a food processor, mixer, or shred it by hand. Be sure not to over-pulse or over-mix the chicken when shredding.
- Celery: Make sure to dice the celery small.
- Serving: I recommend letting the chicken salad chill in the refrigerator for about an hour before serving, however, you can serve immediately after making.
