7 Up Cake Recipe

- 1 13.25 ounce box lemon cake mix
- 1 3.4 ounce box lemon instant pudding
- 1 cup 7-Up
- 4 eggs
- ¾ cup vegetable oil
Icing
- 2 cups powdered sugar
- 2 tablespoons 7-Up
- 1 teaspoon milk
Preheat oven to 325 degrees F. Grease a 10 inch bundt pan with baking spray or shortening and flour.
Using an electric mixer, mix the cake mix, pudding mix, eggs, vegetable oil, and 7 Up until just combined.
Pour the cake batter into pan the prepared bundt pan. Bake for 35-40 minutes or until a toothpick comes out clean.
Remove the cake from the oven. Let cool for 10 minutes. Carefully invert the cake on a serving plate or wire cooling rack. Let the cake completely cool.
In a small bowl, mix together the powdered sugar, milk, and 7 Up. Drizzle over the cooled cake.
- Try not to over mix the cake batter. This will prevent the cake from becoming tough.
- Make sure to grease the cake pan. I like using a spray like Baker's Joy or PAM Baking Spray. You could also coat the pan with shortening and dust with flour.
- Give the pan a tap on the counter before placing in the oven. This will help the batter settle.
- Test that the cake is done baking with a toothpick.
- Let the cake cool in the pan for about 10 minutes before removing it.
- Make sure the cake completely cools before adding the icing.
