- 1 zucchini, chopped
- ¼ cup onion, chopped
- 2 cloves garlic
- 1 jalapeno remove seeds
- 2 (14.5 once) cans fire roasted tomatoes
- 1 tablespoon lime juice
- ¼ cup fresh cilantro
- 1 teaspoon salt
- ⅛ teaspoon sugar
Place chopped zucchini, red onion, garlic, jalapeno, lime juice, cilantro, salt, and sugar in a food processor.
Slowly pulse until everything is finely chopped. Push down any bits on the side of the food processor.
Add in the tomatoes and pulse until desired consistency.
Serve immediately or store in an airtight container in the refrigerator until ready to eat.
