Taco Tortellini

Taco tortellini is an easy, cheesy, made with seasoned beef, tortellini, and taco flavors. A quick meal perfect for a weeknight meal.

Ingredients

  • 1 pound ground beef
  • ½ cup onion, diced
  • 1 (1 ounce) taco seasoning packet
  • 1 (10 ounce) canned tomatoes with green chiles I use Rotel. Do NOT drain.
  • 1 (8 ounce) can tomato sauce
  • ¾ cup beef broth
  • 1 cup shredded Colby Jack cheese

Instructions

  • In a large skillet over medium heat, cook the ground beef until cooked. Drain off any excess grease.
  • Stir in the diced onion and cook for 2-3 minutes.
  • Stir in the taco seasonings. Add in the beef broth, tomato sauce, and ROTEL tomatoes.
  • Stir in the refrigerated tortellini. Make sure to stir it into the sauce.
  • Place a lid on the skillet and cook for 5 minutes. Stir occasionally.
  • Sprinkle the cheese over the tortellini. Place the lid back on the skillet.
  • Cook until the cheese melts.
  • Add any of your favorite toppings and serve.
