- 1 pound ground sausage
- ½ cup onion, diced
- ½ cup red bell pepper, diced
- 1 stalk celery, diced
- 8 ounce can water chestnuts, drained and diced
- 4 cups chicken broth
- 1 cup long grain rice
- 1 packet dry Lipton Noodle Soup Mix
Preheat the oven to 350 degrees F. Spray a 9 x 13 baking dish with non-stick cooking spray.
In a large skillet or dutch oven, crumble and brown the sausage over medium heat. Once the sausage has browned, drain off any excess grease.
Stir in the diced onion, celery, bell pepper, and water chestnuts. Stir and cook for 2-3 minutes.
Mix in the uncooked rice and a packet of Lipton Noodle Soup Mix.
Pour in the chicken broth. Stir to combine. Let the mixture simmer over medium heat for 10 minutes.
Transfer the casserole mixture into the prepared baking dish. Cover the baking dish tightly with foil.
Bake for 50 minutes. Remove the casserole from the oven and let sit for 5 minutes. Carefully remove the foil and serve warm.
