Ritz Cracker Cookies

Ingredients

  • 1 cup finely chopped pecans
  • 1 cup dried, chopped dates
  • 1 sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) cream cheese, softened
  • 3 cups powdered sugar
  • 4 tablespoons unsalted butter
  • 36 Ritz crackers

Instructions

  • Place the crackers on a cookie sheet.
  • Put chopped pecans, dates, and sweetened condensed milk in a saucepan. Heat over medium heat. Keep stirring until the mixture thickens, about 5 minutes.
  • Spread the mixture on top of each cracker. Let the mixture cool on the cracker for a few minutes while making the frosting.
  • To make the frosting, mix together softened cream cheese, softened butter, vanilla, and powdered sugar.
  • Spread frosting on top of each cracker.
