  • 1.5 lbs boneless, skinless chicken breast
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 sweet onion, sliced
  • 1 14.5 oz tomatoes with green chilis (like Rotel)

Fajita Spice Blend

  • 2 teaspoons chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper


  • Place sliced peppers and onion on the bottom of slow cooker.
  • Place chicken breasts on top of peppers and onions. 
  • In a small bowl, mix together fajita spice blend. Top the chicken with the spices.
  • Pour can of tomatoes with green chilies on top of chicken. 
  • Cover with lid and cook on high for 3-4 hours or low 6-8 hours. Once chicken has cooked, either slice the chicken or shred and return to slow cooker.
