Ingredients

  • 1 tablespoon vegetable oil
  • 1 28 oz can diced tomatoes
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, diced
  • 1/4 cup cilantro
  • 1 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
  • juice of half a lime

Instructions

  • Add oil to a saucepan. Warm over medium heat. Add in onion, jalapeno and garlic.
  • Cook for 2-3 minutes.
  • Add in tomatoes, cumin, salt, sugar, cilantro, and lime juice. Stir.
  • Simmer for 10 minutes. Remove from heat and let cool 10-15 minutes.
  • Pour into a food processor or blender. Pulse until blended.
  • Let completely cool before storing to freeze.
