Poolside Dip Recipe
This poolside dip is cool and full of flavor. A delicious appetizer that is great for sitting by the pool, cookouts, BBQs, and more. This can be made in 5 minutes.

- 1 (10 ounce) can Rotel diced tomatoes with green chilies
- 1 (2.25 ounce) can sliced black olives, drained
- 1 (0.6 ounce) pack zesty Italian seasoning
- 1 green onion, diced
- ¼ cup white vinegar
- ⅓ cup extra virgin olive oil
- 2 cup finely shredded colby jack cheese or cheddar cheese
Place all of the ingredients into a large bowl.
Stir to combine everything.
Serve immediately or cover and chill in the refrigerator until ready to serve.
- Drain the olives. Make sure to drain off the olive juice for this recipe. You don't need to drain the Rotel.
- Chill the dip. While you can serve this dip immediately after making, I do like mine to chill for about 30 minutes for the flavors to develop.
