Poolside Dip Recipe

This poolside dip is cool and full of flavor. A delicious appetizer that is great for sitting by the pool, cookouts, BBQs, and more. This can be made in 5 minutes.

Ingredients

  • 1 (10 ounce) can Rotel diced tomatoes with green chilies
  • 1 (2.25 ounce) can sliced black olives, drained
  • 1 (0.6 ounce) pack zesty Italian seasoning
  • 1 green onion, diced
  • ¼ cup white vinegar
  • cup extra virgin olive oil
  • 2 cup finely shredded colby jack cheese or cheddar cheese

Instructions

  • Place all of the ingredients into a large bowl.
  • Stir to combine everything.
  • Serve immediately or cover and chill in the refrigerator until ready to serve.

Notes

  • Drain the olives. Make sure to drain off the olive juice for this recipe. You don't need to drain the Rotel.
  • Chill the dip. While you can serve this dip immediately after making, I do like mine to chill for about 30 minutes for the flavors to develop.
