This easy one-pot kielbasa pasta recipe is just what you need for an easy weeknight dinner. Packed full of flavor, this cheesy kielbasa pasta is a family favorite. It can be made in about 30 minutes with just a few ingredients.

Ingredients

  • 1 pound kielbasa, cut in rounds and then in half
  • ½ cup onion, diced
  • 1 clove garlic, minced
  • 16 ounces mini bow-tie pasta
  • 1 10 ounce ROTEL
  • ¾ half and half
  • 1 cup shredded colby and monterey jack cheese
  • 2 cups broth
  • 2 green onion, diced

Instructions

  • Place the cut kielbasa and diced onions in a large skillet or pot. Cook over medium heat for about 5 minutes or until the kielbasa starts to brown. Add the garlic and stir for 30 seconds.
  • Pour in the chicken broth, ROTEL, half and half, and pasta. Stir to combine.
  • Bring the mixture to a boil. Cover the skillet with a lid. Cook on medium heat for 15 minutes or until the pasta is cooked.
  • Take the skillet off the heat and stir in the cheese and top with green onions.
  • Serve warm.
