Kielbasa Pasta

- 1 pound kielbasa, cut in rounds and then in half
- ½ cup onion, diced
- 1 clove garlic, minced
- 16 ounces mini bow-tie pasta
- 1 10 ounce ROTEL
- ¾ half and half
- 1 cup shredded colby and monterey jack cheese
- 2 cups broth
- 2 green onion, diced
Place the cut kielbasa and diced onions in a large skillet or pot. Cook over medium heat for about 5 minutes or until the kielbasa starts to brown. Add the garlic and stir for 30 seconds.
Pour in the chicken broth, ROTEL, half and half, and pasta. Stir to combine.
Bring the mixture to a boil. Cover the skillet with a lid. Cook on medium heat for 15 minutes or until the pasta is cooked.
Take the skillet off the heat and stir in the cheese and top with green onions.
Serve warm.
