Iowa Party Bites

Iowa party bites are a delicious, warm cheesy appetizer that is perfect for a party. Cheesy corn filling in a tortilla chip scoop and baked, these corn bites are always a hit!

Ingredients

  • 36 Tostitos Scoops tortilla chips
  • 1 (4 ounce) green chiles
  • 1 (8 ounce) cream cheese, softened
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon paprika
  • 1 (15.25 ounce) canned fiesta corn, drained
  • ½ cup parmesan cheese, grated

Instructions

  • Preheat the oven to 400 degrees F. Place the Scoops chips on a baking sheet.
  • Place softened cream cheese, mozzarella cheese, egg, green chiles, garlic powder, paprika, salt, and pepper in a large bowl. Mix with an electric mixer until combined.
  • Add the drained fiesta corn to the mixture.
  • Stir the mixture until combined.
  • Scoop 1 tablespoon of the mixture into each chip.
  • Top each chip with grated parmesan cheese.
  • Bake for 12-15 minutes. Serve these warm and enjoy.

Notes

  • Be sure the cream cheese is softened.
  • Drain the fiesta corn well.
  • Don't put too much filling in the chip.
