- 36 Tostitos Scoops tortilla chips
- 1 (4 ounce) green chiles
- 1 (8 ounce) cream cheese, softened
- 1 cup mozzarella cheese, shredded
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon paprika
- 1 (15.25 ounce) canned fiesta corn, drained
- ½ cup parmesan cheese, grated
Preheat the oven to 400 degrees F. Place the Scoops chips on a baking sheet.
Place softened cream cheese, mozzarella cheese, egg, green chiles, garlic powder, paprika, salt, and pepper in a large bowl. Mix with an electric mixer until combined.
Add the drained fiesta corn to the mixture.
Stir the mixture until combined.
Scoop 1 tablespoon of the mixture into each chip.
Top each chip with grated parmesan cheese.
Bake for 12-15 minutes. Serve these warm and enjoy.
- Be sure the cream cheese is softened.
- Drain the fiesta corn well.
- Don't put too much filling in the chip.
