Gingerbread Apple Bars
Chewy, gingerbread apple bars are filled with diced apples and warm spices. Topped with a crumbly brown sugar streusel, these gingerbread bars are a delicious treat.

- ½ cup unsalted butter, softened
- ¾ cup sugar
- ¼ cup light brown sugar
- ⅓ cup molasses
- ½ teaspoon vanilla extract
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 tablespoon cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
- 1 cup apples, skin off, diced small
Streusel
- ½ cup all-purpose flour
- ¼ cup light brown sugar
- ¼ cup unsalted butter, cut into small pieces
Preheat the oven to 375 degrees F.
Spray an 8 x 8-inch baking dish with non-stick cooking spray or line it with parchment paper.
In a small bowl, whisk together flour, baking soda, cinnamon, ginger, clove and salt.
Cream together butter, sugar, brown sugar, molasses, vanilla extract and egg with an electric mixer.
Slowly mix dry ingredients in with butter mixture until combined. Stir in diced apples.
Spread batter into prepared baking dish.
Streusel
In a small bowl, use a fork to mix together flour, brown sugar and butter until it makes a crumble.
Spread the crumble over the gingerbread dough.
Bake for 30 - 35 minutes or until toothpick inserted comes out clean.
Let the bars cool before serving.
