Dill Pickle Cheese Ball

Ingredients

Cheese Ball

  • 2 ( 8 ounce) cream cheese
  • 2 tablespoons mayonnaise
  • ½ teaspoon garlic powder
  • 2 tablespoons pickle juice
  • 1 ½ dill pickles, chopped
  • 1 ½ cups shredded cheddar cheese
  • 1 tablespoon fresh dill
  • 2 green onions, diced

Coating

  • 1 lb bacon, cooked and crumbled
  • 1 green onion, diced
  • ½ tablespoon fresh dill, chopped

Instructions

  • Cream together the softened cream cheese, garlic powder, mayonnaise, and pickle juice in a large bowl with an electric mixer.
  • Stir in the diced pickles, green onions, dill, and shredded cheese. Cover the bowl and refrigerate for 15-20 minutes.
  • Make the topping by stirring together crumbled bacon, green onion, and dill pour on a plate.
  • Large cheese ball: Roll the cheese ball mixture into a large ball. Roll in the bacon topping mixture. Wrap the cheese ball in plastic cling wrap and refrigerate for at least an hour.
    Small cheese ball bites: Roll the mixture into small cheese balls. Roll each one in the topping mixture and then place on a parchment lined baking sheet. Refrigerate for at least an hour.
  • When ready to serve, remove the cheese ball from the refrigerator about 15 minutes before serving to allow it to slightly soften.

Notes

  • Soften the cream cheese. This is an important step. Softened cream cheese will help to make the cheese ball nice and creamy with no lumps.
  • Cook the bacon until crispy. This will give you the best texture and flavor for the coating.
  • Chill before shaping. Chilling the cream cheese mixture in the refrigerator for about 15 minutes will help to make it easier to shape the cheese ball.
  • Chill the cheese ball before serving. I recommend chilling before serving to let all of the flavors develop.
  • Use plastic wrap to form a large cheese ball. This helps to mold the cheese ball into a ball shape and keep the shape while chilling.
