Copycat McDonald's Sausage Burrito

Ingredients

  • 8 eggs
  • 1 tablespoon half and half
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound breakfast sausage
  • 1/2 cup diced onions
  • 2 tablespoons diced green chilies from a can
  • 1/2 cup diced tomatoes
  • 8 soft tortillas 6 or 8 inch
  • 8 slices American cheese

Instructions

  • Cook and crumble the sausage in a large skillet over medium heat. Remove any excess grease. Add the diced onion and cook for 2-3 minutes. Stir in the green chilies and diced tomatoes. Cook for a further 2 minutes.
  • Whisk the eggs, half and half, and salt and pepper in a bowl.
  • Pour the beaten eggs into the same skillet as the sausage. Cook until they are fluffy and moist.
  • Soften tortillas in the microwave for 10-15 seconds each. Assemble a burrito by placing halved cheese slices in the center of a soft tortilla, followed by fluffy scrambled egg and sausage mixture. Fold it into a burrito and serve.

Notes

  • Warm the tortilla in the microwave for 10 seconds or in a warm and clean skillet for easy rolling when assembling your McDonald's sausage burrito. You can also wrap the assembled burrito in parchment paper and microwave it for 10-15 seconds.
  • Don’t overcook the eggs, as they can become dry and rubbery.
  • Cook the eggs and sausage the day before assembling the McDonalds breakfast burrito and store these ingredients in separate airtight containers in the fridge. This will reduce the recipe time even more!
  • Crumble the sausage well so that you’re left with tiny bits.
  • To reduce clean-up, cook the fluffy scrambled egg over the sausage and onions. Draining the excess grease from the cooked sausage is a good idea.
  • Flip your leftover stored burritos halfway through the reheating time to ensure an even reheating on both sides.
