- ½ head green cabbage
- ½ head red cabbage
- ¼ cup green onion, diced
- 1 carrot, shredded
- 1 cup blue cheese crumbles
- ¾ cup mayonnaise
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- ¼ teaspoon salt
- ⅙ teaspoon ground black pepper
Prepare the red and green cabbage by cutting or slicing into shreds. Shred the carrot.
Place the prepared cabbage in a large bowl. Add the shredded carrot, blue cheese, and diced green onion.
In a separate bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
Pour the dressing over the cabbage mixture. Toss everything to fully combine.
- Use freshly shredded cabbage. This makes a big difference in my opinion. Fresh cabbage is more flavorful and crunchy.
- Use a good blue cheese. Choose your favorite crumbled blue cheese.
- Let the slaw chill. After making the slaw, I like refrigerating it for about 30 minutes to let the flavors come together.
