Ingredients

  • ½ head green cabbage
  • ½ head red cabbage
  • ¼ cup green onion, diced
  • 1 carrot, shredded
  • 1 cup blue cheese crumbles
  • ¾ cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • teaspoon ground black pepper

Instructions

  • Prepare the red and green cabbage by cutting or slicing into shreds. Shred the carrot.
  • Place the prepared cabbage in a large bowl. Add the shredded carrot, blue cheese, and diced green onion.
  • In a separate bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
  • Pour the dressing over the cabbage mixture. Toss everything to fully combine.

Notes

  • Use freshly shredded cabbage. This makes a big difference in my opinion. Fresh cabbage is more flavorful and crunchy.
  • Use a good blue cheese. Choose your favorite crumbled blue cheese.
  • Let the slaw chill. After making the slaw, I like refrigerating it for about 30 minutes to let the flavors come together.
