Apple Cranberry Slaw

Apple cranberry slaw is a fresh, crunchy side dish perfect for any occasion. Crisp apples, dried cranberries, cabbage, and a simple creamy dressing.

Ingredients

  • 1 green cabbage, shredded
  • 1 large Honeycrisp apple
  • 1 tablespoon lemon juice
  • 1 cup matchstick cut carrots
  • 2 green onions, diced
  • ¾ cup dried cranberries

Dressing

  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon celery seeds
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Place the shredded cabbage, apples, dried cranberries, and diced green onions in a large bowl. Toss to combine.
  • To make the dressing, in a separate bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, honey, celery seed, salt, and pepper.
  • Pour the dressing over the slaw mixture. Toss to fully coat the cabbage mixture.
  • Cover and refrigerate for at least 30 minutes before serving.

Notes

  • Use crisp apples to make this apple cranberry coleslaw. I like using Honeycrisp, Gala, or Granny Smith apples.
  • Prevent the apple from browning by tossing them in a little lemon juice.
  • Don't use too much dressing. The best thing about this apple slaw is the crunchy texture. Using too much dressing can make it soggy.
